Wednesday was one of those cold, rainy days where you wish you could lie on the couch with a good book all day long. Unfortunately for me, it was not one of those days. Even getting to the car you would get absolutely soaked and then in turn freeze half to death until you were dry. Needless to say I was not in a very good mood by the time dinnertime rolled around. Since I had been given the opportunity to check out Bertolli Meal Soups, I thought it was a good night for a nice warm bowl of soup to end the day on a high note.

I was given the challenge of Making a Weeknight Meal “Special” with the help of Bertolli Meal Soups. Since Mike and I both work from home, and the girls go to school on opposite ends of the city, it is important for me to give a healthy, tasty meal that does not take forever to cook. With the challenge I was given an hour – but it took less than half of that.
The Tween and I had gone to Publix to choose which Bertolli Meal Soups we wanted for dinner – and naturally could not agree on just one. She loves tortellini so she wanted the Tomato Florentine & Tortellini with Chicken where I am a huge fan of Minestrone from Olive Garden, so I wanted the Chicken Minestrone. In the end – we got both.

Bertolli Meal Soups have everything you need right in the bag – simply add a cup of water and you are good to go. All of the meats, vegetables, seasonings and broths are right there in the bag perfectly portioned. (which is amazing, because I always add salt to everything – but this was already perfect.)
I paired our soups with a fresh salad with Italian dressing and even cooked some Pillsbury Crescent Rolls which worked great for sopping up the last little bit of soup left in your bowl. And YES it was that good that you wanted every drop.

The Chicken Minestrone certainly rivals Olive Garden in flavor. I was impressed that the vegetables stayed nice and crunchy while the chicken and noodles were soft. Even the beans were soft without being all “mushy.”
The Tomato Florentine & Tortellini with Chicken was the overall favorite though, with the sauce having almost a cheesy taste that we all loved. Even Taylor who initially started with the “I dont like tortellini soup” stuff ate every bit of hers and asked for seconds.
Now, as someone who is “weird” about meat – and especially “pre-prepared” meat, I have to tell you I was really worried about getting any soup with meat in it. I am much more of a “vegetable soup” person when it comes to canned or frozen meat soups, but I was pleasantly surprised with the Bertolli Meal Soup. There was one piece of chicken I found that looked a little funky – and you know I inspected every one of them before I ate it – but other than that the pieces were lean, well cut breast meat like I would prepare in my own soups at home. That alone got big points from me.
The night was saved as we all sat together at dinner and enjoyed a hot bowl of soup after a rainy miserable day. The Tween has already requested we get the Tomato Florentine & Tortellini with Chicken more often – even offering to buy it herself from her allowance. I would call that a win.
