These Sugar-Free Jello Shots have a little gummy bear inside - just for fun! I love the Smart Sweets Gummy Bears because they taste great... without the "side effect" of most sugar free gummy bears.

A few things to note - each 6oz box of Jello makes approximately 20 Jello Shots. If each guest has four Jello Shots, this recipe makes enough for five guests. The Simply Delish Jels are smaller, and make about 6 Jello Shots per box.

Also note that the carbs in this recipe come from sugar alcohols and Sugar-Free Gummy Bears have also been known to cause an upset stomach - so keep that in mind when you decide if you want to include the sugar-free gummy bears.

Sugar Free Jello Shots

Ingredients:

  • 1 Box of Sugar-free Jello
  • 1 c. Water
  • 1 c. Rum, vodka or other alcohol of your choosing
  • Sugar-free gummy bears

Instructions:

Place 1 cup of water into a pot, and bring to a low boil on the stove.

As soon as the water boils, remove it from the heat and add in the box of sugar-free Jello. Whisk until completely dissolved.

Pour 1 cup of alcohol of your choice into the Jello mixture, and whisk until combined.

Pour the Jello mixture into 12 shot cups, and allow to cool for several minutes.

Once the Jello is cool, place a sugar-free gummy bear into the center of each shot.

Place the Jello shots into the fridge to set for a minimum of 3 hours.

You can repeat the steps above with additional flavors of sugar-free Jello to create a rainbow of colorful Jello shots.

The Best Sweet Wines Come From Italy

You can probably tell from the name of my blog and social channels that I have a love for a certain type of Italian wine. Italy is known for producing some of the best wines in the world, and whether you are looking for white wine, red wine, sweet wine, or one that is more dry, you are sure to find the perfect vino for any occasion.

Italy has been making wine for over 4,000 years. In fact, all 20 of Italy’s regions produce wine.

No other country in the world can say that! Each region has its own distinctive topography as well as their own winemaking traditions – giving each region their own variety of specialty wines.

Moscato has been my favorite wine since I attended a local wine tasting and fell in love. While Moscato is known for its sweetness, some are much sweeter than others, and tastings are a great way to find your favorite.

Moscato is said to have originated in the rocky regions of Northwest Italy’s Aosta Valley and Piedmont regions, but is also made in regions as far south as Basilicata and Sardinia.

There are also many different clones of this grape, but all feature that distinctively aromatic bouquet of ripe apricots and pear.

Riesling, another often sweet wine, comes from areas like Lombardy, one of Italy’s larger regions, which accounts for 3% of Italy’s wine production of both red and whites. 

Riesling can also be found in  the Alto Adige – Italy’s northernmost region nestled against the backdrop of the Dolomite mountains.

Typically, they are made in a dry style, but they will always bear the hallmark notes of green apple and nectarine that give the impression of sweetness.

But sweet wines are not all that you will find in Italy. The region of Abruzzo accounts for 6% of Italy’s wine production including the full-bodied Montepulciano.

A little further south in Basilicata you will find Aglianico, another amazing robust red that pairs well with rich, roasted meats and hard cheeses.

I love Moscato because I feel like it pairs with most anything.  It is a light wine that goes great with white fish, chicken, salads – virtually everything.

It is also perfect for pairing with a variety of tapas, which makes it the perfect choice of wine for entertaining a crowd.

With St Patrick's Day coming up this weekend I have been looking for a way to join in the festivities... without breaking away from my keto lifestyle.

Yes, I will admit, one of the reasons I am such a big fan of Keto over other eating plans is that you can still indulge a bit from time to time on adult beverages, and while my typical "whiskey and diet" is a good choice, I wanted something a little different for the holiday.

This Ginger Lime Mojito is a twist on a traditional Keto mojito. An easy Low Carb Cocktail is made with one of my favorite mixers - Sparkling Ice - which has zero calories and zero carbs but tons of flavor! And let's be real... I will be drinking this far beyond St Patrick's Day.

Ginger Lime Mojito

INGREDIENTS

3oz Sparkling Ice Ginger Lime

1.5oz White Rum

10 mint leaves

Lime wedge, for garnish

Mint sprig, for garnish

DIRECTIONS

In an ice-filled Collins glass, add Sparkling Ice Ginger Lime, rum, and mint leaves, then stir. Garnish with a lime wedge and mint sprig and serve.

And while I save indulging in my favorite sweet vino now only for special occasions, I do still love an adult beverage pretty regularly. My newest favorite - the Keto Mojito.

I am only a little embarrassed to admit that I believe a good part of my success with keto is in part to still be able to have the occasional cocktail. I am Moscato Mom after all.

Now let me begin by saying there is a school of thought that NO alcohol can be considered keto... and I respect that.

But I also feel like in order for any lifestyle to work, it has to be one that you can effectively do for the rest of your life... and for me, that is going to involve some cocktails.

So for that reason, I work my occasional cocktail into my macros... and have still been successful. It is a win-win.

Coquito - Puerto Rican Coconut Eggnog

I have never been a fan of eggnog. That is until I discovered Coquito - Puerto Rican Coconut Eggnog that has a totally different flavor and consistency and is absolutely delicious.

And I like mine a little strong... so it's dangerously delicious. But hey - its only a few times a year, right?! This year I teamed up with Blue Chair Bay for Blogtender Nation to concoct recipes with their premium blend rums, and I knew I had to make Coquito - it was PERFECT.

This Coquito recipe is egg free. There are tons of Coquito recipes that you can find with egg online that would all be great with the Blue Chair Bay Spiced Coconut Rum I am sure - but for this one - I went egg free.

I also put whipped cream on mine... because it is pretty and tastes great - even though my Puerto Rican best friend let me know that was most definitely NOT traditional... to each their own, amiright!?

It does need to chill in the fridge for a few hours though - so be sure to mix it up before your Christmas Party begins - because once you get that first taste, you are going to want to sip it all party long.

Coquito is smooth and savory, and the Blue Chair Bay Coconut Spiced Rum gave it just that perfect little extra kick to bring it all together.

Coquito Recipe

Ingredients

  • 1 12oz can evaporated milk
  • 1 14oz can sweetened condensed milk
  • 1 15oz can sweetened cream of coconut
  • 1 14oz can coconut milk
  • 3 cups Blue Chair Bay Coconut Spiced Rum
  • 3 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • whipped cream (optional)

Blend all ingredients together in a large blender. If you do not have a blender large enough, you can make it in small batches and pour together into a pitcher.

Seal tightly and place in the refrigerator for at least 2 hours. Shake well and then serve ice cold straight with cinnamon topping and whipped cream if you would like.

If there are leftovers (probably not, but just sayin) they will keep for about a week if sealed tightly in the fridge. Make sure to shake well before serving.

Sampling a range of good wines can be an expensive endeavor—especially if you have expensive taste. Abbazia di Novacella Kerner ($20): If there’s one thing the monks of Abbazia di Novacella are known for, it’s making great wine. Their kerner is part riesling and part red grape, and the delicious combo will cost you only $20.

2012 Trimbach Pinot Gris Reserve ($22): Trimbach’s pinot reserve is a reasonably priced foray into the world of vintages.

2015 Clos des Lunes, Lune d’Argent ($20): If you’re looking for something a bit dryer, this Clos des Lunes Lune d’Argent is an excellent choice at just $20.

2015 Jordan Russian River Chardonnay ($32): Jordan Winery’s Russian River Chardonnay is one of our best chardonnay choices, thanks to its delicious flavor and balance.

Reds

2015 Domaine Barmes Buecher Reserve Pinot Noir ($33): Alsace is well-known for producing great wine, and this one is no exception. This is a nice, rich red with plenty of flavor.

2015 David Reynaud Domaine les Bruyeres Crozes-Hermitage Beaumont ($29): Reynaud is one of many great young winemakers in Rhone, and his syrah is an excellent choice.

2014 Chateau Cartier Saint-Emilion Grand Cru ($27): For only $27, you can dive into a deliciously fruity organic bordeaux merlot that’s delicious and sophisticated.

2015 Gabbiano Dark Knight ($17): If you need to get a few bottles of something affordable that will impress your guests, this blend of merlot, cabernet and sangiovese have plenty of flavor for a great price.

Champagnes

NV Geoffroy Expression Brut Premier Cru ($44): This delectable champagne has a pinot base that gives it a silky smooth texture and plenty of busy flavor that’s sure to impress any discerning tongue.

NV Larmandier-Benier Extra Brut Latitude ($48): If you prefer your champagnes start with Chardonnay, this is a great choice. It’s got a nice, creamy texture that makes this delicious champagne go down easy.

Sparkling Wines

2012 Domaine Carneros Estate Brut ($35): This vintage sparkling wine is an inexpensive alternative to champagne that still provides tons of great flavor.

2009 Mata I Coloma-Pere Mata Reserva Familia Brut Nature Cava ($26): For $26, you can’t go wrong with this vintage Spanish sparkling wine.

2016 Tablas Creek Vineyard Dianthus Rose ($25): A deep, full-flavored rose, this Tablas Creek wine is an excellent way to get a high-end bottle for a reasonable price.

2013 Chateau Coutet ($46): Bordeaux makes great sweet wines, and this one is no exception. It’s an excellent choice for light sipping after a nice dinner.

1995 Kalin Cellars Sonoma County Chardonnay Cuvee CH ($46): This is about as cheap as you can get a chardonnay that’s been aged for this long, and the taste is absolutely worth the price tag.

One week from today is Valentine's Day! Valentine's Day is my favorite holiday - I just love a day dedicated to showing people how much you care! This year is especially exciting for me since it will be my first official Valentine's Day as Mrs. Kmetz and I plan on celebrating that with a cocktail or two! Check out these super easy Valentine's Day Cocktails to help you celebrate this holiday!

Valentine's Day Cocktails

Sparkling Frosé

INGREDIENTS

  • ½ Bottle of Sparkling Ice Cherry Limeade
  • 8 Rosé Ice Cubes
  • 1oz lemon juice
  • Mint, for garnish

DIRECTIONS

Pour rosé into an ice cube tray and place in freezer until frozen. In a blender, combine Sparkling Ice Cherry Limeade, rosé cubes and lemon juice. Garnish with a mint sprig and serve.

Sparkling Hibiscus

INGREDIENTS

DIRECTIONS

Place a whole hibiscus flower in the bottom of a glass. Fill glass with Santa Margherita Prosecco Superiore DOCG to ¾" of the rim. Carefully spoon 2 teaspoon of the hibiscus syrup down the interior side of each glass.

Sparkling Raspberry

INGREDIENTS

  • 1½ ounces vanilla vodka
  • 1 tsp. simple syrup
  • ½ oz. fresh lemon juice
  • Sparkling Ice Grape Raspberry
  • Raspberry ice cubes, for garnish
  • DIRECTIONS

Place raspberry ice cubes in a glass and set to the side. In a cocktail shaker, add vanilla vodka, simple syrup, and fresh lemon juice- shake. Strain over ice and add Sparkling Ice Grape Raspberry.

Rose Petal Rosé

INGREDIENTS

DIRECTIONS

Pour a glass of Santa Margherita Sparkling Rosé. Place a pink rose petal on top and serve.

Sweet and Sparkly Champagne

INGREDIENTS

  • 3oz champagne, chilled
  • Cotton candy
  • 1oz Sparkling Ice Cherry Limeade

DIRECTIONS
Fill champagne flutes with champagne and Sparkling Ice Cherry Limeade. Place a small 2" piece of cotton candy on top of the glass as a garnish. Push the cotton candy into the glass for a fun disappearing effect.

Flor Adora

INGREDIENTS

  • 0.75 oz lemon juice
  • 0.75 oz Small Hand Foods raspberry gum syrup
  • 1.5 oz Plymouth Gin
  • 4 oz Bruce Cost Ginger Ale Original

DIRECTIONS

  • Combine all ingredients in a glass with ice, garnish as desired.

Purity Berry H20

INGREDIENTS

  • 4 Parts Purity Vodka
  • 3 Parts Berry Water
  • 1 Cup Mixed Berries
  • 1 Long Piece of Lemon Zest
  • 4 Parts distilled or bottled high-quality water

DIRECTIONS

Combine the ingredients in a glass pitcher and let sit, refrigerated, for at least 4 hours – or preferably overnight, before serving. Serve the vodka mixed with the Berry Water either shaken and strained or just combined over ice.

The Rosemary Hound

INGREDIENTS

  • 2 Parts Purity Vodka
  • 1 Part Simple Syrup
  • 4 Tablespoons Fresh Rosemary Leaves
  • ½ Part Ruby Red Grapefruit Juice
  • 2 Slices Ruby Red Grapefruit, for Garnish

DIRECTIONS

Place the grapefruit juice, vodka, and 1 ounce rosemary simple syrup in a cocktail shaker with ice. Shake well to mix. Serve on the rocks, garnished with a grapefruit slide.

Nature's Candy Spritzer

INGREDIENTS

4 blackberries

2 mint leaves

Juice of ½ lemon

2oz Gin

Sparkling Ice Lemon Lime

DIRECTIONS

Place blackberries and mint into a cocktail shaker and muddle. Combine lemon juice and gin, shake until combined.  In an ice filled rocks glass, strain blackberry mixture and top with Sparkling Ice Lemon Lime. Garnish with fresh mint and serve.

Sparkling Watermelon Vodka Lemonade

INGREDIENTS

3 cups seedless watermelon pieces

3 lemons, juiced

½ cup vodka

¼ cup fresh mint

2 cups Sparkling Ice Classic Lemonade

DIRECTIONS

In a blender, puree the watermelon and lemon juice, strain through a sieve into a drink pitcher. Add mint, vodka, and Sparkling Ice Classic Lemonade- then stir. Serve over ice and garnish with fresh mint leaves.

Blackberry Smash

INGREDIENTS

2 oz Santa Margherita Prosecco Superiore DOCG

Fresh blackberries

Fresh basil leaves

1 oz gin

Ingredients:

4 oz Orange Mango Sparkling Ice

Ingredients:

2 parts Blanco Tequila

½ part Gran Gala

Valentine's Day Cocktail Recipes from Blue Chair Bay Rum

It made the perfect Puerto Rican Coquito ever.  With Valentine's Day this weekend, it is the perfect opportunity to pick up a bottle of Blue Chair Bay Rum to share with your sweetie. Here are two delicious recipes to try out.

Island Mimosa

Ingredients:

+     1 ½ oz. Blue Chair Bay® Banana Rum

+     2 oz. Sparkling wine

+     1 strawberry, chopped

+     1 lemon wedge

Method: Muddle strawberry and lemon in a mixing glass. Add Blue Chair Bay Banana Rum and ice and shake well. Strain into champagne flute. Top with sparkling wine. Garnish with a strawberry slice.

+        1 ½ oz. Blue Chair Bay Coconut Spiced Rum

Bare Spiced Cranberry Margaritas

  • ⅔ c agave nectar
  • 2 tablespoon whole allspice
  • 2 tablespoon whole cloves
  • 4 cinnamon sticks
  • One 2" fresh nob of ginger, peeled and sliced
  • 2 c fresh cranberries, rinsed

Instructions:

For Simple Syrup

  1. Combine all the ingredients in a saucepan and stir over low heat until combined.
  2. Raise heat and simmer the mixture for about 5-6 minutes or until the cranberries start to split.
  3. Once most have split remove the pan from the heat and cover with a lid. Let sit for 2 hours for the flavors to infuse
  4. . After the two hours strain the mixture into a jar using a mesh strainer, pressing the mixture against the strainer to extract all of the flavor
  5. . Keep in a resealable container and chill completely until ready to use.

For Margaritas

  1. Dip the rim of the glasses in a shallow bowl of the simple syrup and then immediately into a shallow bowl of green dyed sugar. Let dry completely.
  2. Once dry fill the glasses with ice. In a cocktail shaker with ice add 4 tablespoon of the spiced cranberry simple syrup, the tequila, orange liqueur, Bare Mixer's Pomegranate Cranberry Cosmo and Bare Mixer's Margarita.
  3. Cover and shake well then strain into the 4 glasses.
  4. Taste and add more simple syrup if desired. Garnish with cinnamon sticks and sugared cranberry skewers.

Candy Cane Cooler

Ingredients:

  • 1 tbs crushed soft peppermint candy
  • 1½ fl oz vodka
  • splash of white creme de menthe
  • ¼ fl oz brandy
  • ½ fl oz half-and-half
  • Crushed ice
  • Peppermint stick for garnish
  • Mint sprig for garnish

Directions:

Combine the vodka and crushed peppermint.  Stir to dissolve.  Add the remaining ingredients, stir and garnish.

Ingredients

  • 1 part Pinnacle® Whipped® Vodka
  • 1 part Hot Chocolate

Give your Hot Chocolate a little extra kick this holiday season! Make your Hot Chocolate according to package instructions, then add in Pinnacle Vodka!

Egg Free Coquito

My new favorite made with Blue Chair Bay Coconut Spiced Rum from Kenny Chesney. Unlike any old eggnog you have ever had before!

Ingredients

  • 1 12oz can evaporated milk
  • 1 14oz can sweetened condensed milk
  • 1 15oz can sweetened cream of coconut
  • 1 14oz can coconut milk
  • 3 cups Blue Chair Bay Coconut Spiced Rum
  • 3 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • whipped cream (optional)

Blend all ingredients together in a large blender. If you do not have a blender large enough, you can make it in small batches and pour together into a pitcher.

Seal tightly and place in the refrigerator for at least 2 hours. Shake well and then serve ice cold straight with cinnamon topping and whipped cream if you would like.

If there are leftovers (probably not, but just sayin) they will keep for about a week if sealed tightly in the fridge. Make sure to shake well before serving.

Whatever delicious mix you are serving up this holiday, be sure to drink responsibly, and give up your keys if you plan to indulge to have a safe and happy holiday!

DIY Wine Cork Crafts

A few weeks ago I shared with you my excitement about receiving a new book for review - DIY Wine Corks: 35+ Cute and Clever Cork Crafts by Melissa Averinos. I love wine cork crafts and you may remember my Wine Cork Wreath or Wine Cork Christmas Ornaments. (My thumb has healed just fine, thank you) Anyways as soon as this book came in I dove in to it and started playing - and came up with my favorite cork craft so far - Photo Holders that can also work as Place Settings... you will see what I mean in a minute. I'm not going to give a detailed tutorial - that is what you should order the book for - but here is a quick recap at this fun and simple craft I made one rainy afternoon with the girls.

DIY Wine Corks Craft Book

First of all I have a confession... I ordered the wine corks from Amazon. For one, I don't drink red wine, but the corks are so beautiful from red wine and I wanted some color variety. Plus I wanted to make a bunch of these (again - you will see why in a minute) and I may love wine... but when you are talking about needing a whole bunch of them... I don't drink THAT much wine. But I was delighted to learn that you can order natural wine corks from around the world! How cool is that?!  Next I got my tools together - corks, ribbons, heavy duty crafting wire, scissors and a glue gun.

DIY Wine Cork Crafts

I adjusted the craft just a little bit from the book because I wanted mine a bit bigger - but the idea was the exact same. Melissa uses four corks in her photo holders - I used seven. You want to begin by hot gluing your corks together to form the base - making sure your corks are all about the same length so it's flat.

Next add the ribbons. I used two different ribbons to give it a little more pop. I started with the black ribbon and secured it with hot glue.  Then added the white ribbon on top. I mentioned this craft was super simple and fun, right?!

After the ribbon take the heavy duty crafting wire - thicker the better - to create the little photo slot. Wrap it a few times around your pinky finger - leaving a nice long stem to stick in to the cork. Perfection isnt what counts here - its supposed to look home made. Then I used a small nail to pierce the center cork to shove the crafting wire in to.

Finally, shove the curled craft wire into the cork base and insert your favorite photos! All done!
