Whew here we are again at Wednesday. You know, I think since doing this meme I have really realized just how QUICK a week really is. Craziness.
This week was amazing – we took off for the weekend to go stay at the cabin in Mississippi – my new favorite place to be! I will be posting more about out trip – but how can you even HAVE a bad week with a view like this:
From the moment we arrived, I fell in love with the place. It is so calm and peaceful up there (even after the absolute scariest drive of my life to get there… oh how I love our summer
thunder hail storms) This picture is the view from the deck which has two swings – one of which became my “perch” pretty much for the entire weekend. If I wasnt in the swing, you could find me on a float right in the middle of that river.
One of the things we did up there was visit Charlie’s U-Pik, which is a near 100 acre farm where you literally go and pick your own fresh vegetables. The girls had THE most amazing time, and I now have enough vegetables to can and steam to last us a very long time. I am going to do a full post on just this, because I truly believe EVERYONE should do this. After months of complaining about how expensive it is to Eat Clean, I am as excited as I can be to find a way to save money and still feed my family in the healthiest way possible. (Side note – we are going to pretend that Fried Green Tomatoes fall under the “healthy” category, ok, cause we have eaten them fresh for the last 4 days.)
On Sunday I began my commute to Texas, but something came up and I was able to turn around and return to the cabin to finish the vacation with my family. I had a tough morning leaving them – tears all around from all of us – so as disappointed as I was with not going to Texas, the look on my little Divas faces when they saw me pull back into the driveway after such a tearful Goodbye made it all worth it.
Tonight I am excited to have my parents join us for dinner where I will be cooking up all of the awesome veggies from Charlies – fresh steamed corn, red potatoes, butter beans, and fried okra with a cucumber, onion, and tomato salad. All fresh, picked right out of the ground by either myself or one of the girls.
So the highlight of the week was definitely going to Mississippi… so much so that we have decided to go back Friday. 🙂
