I don’t know about you, but I am already dreaming of Summertime. Clearly that rodent lied when he said Spring was coming early – because it is a ridiculous 30-something degrees here in Florida. FLORIDA. I know. Anyway, I digress… One of my favorite signs of Summer is fresh strawberries showing up in our local stores. I admit, I can just about eat my weight in strawberries, and few things are more disappointing than not being able to get my favorite treat whenever I want them. (Like now… when it’s freezing. Did I mention I hate the cold?)

- 1 cup butter
- 1 cup honey
- 1 teaspoon vanilla extract
- ¾ cup Crunchies Strawberries
- Whip softened butter in a mixer until smooth. Be sure no lumps remain.
- Add honey and vanilla and mix until combined.
- Add Crunchies Strawberries ¼ cup at a time and mix until butter is fluffy and pink.
- Refrigerate butter until firm.
- Spread the butter on your favorite bread and enjoy!
