Air Fryer Chicken Nuggets are a simple and delicious recipe kids of all ages will love. Full of flavor without any additives or preservatives, you will never want premade chicken nuggets again!

You may think it is crazy to make your own homemade chicken nuggets, but since I have begun really paying attention to ingredients I have seen how even the simplest of foods are choc-full of chemicals.

I decided to make these Keto Friendly Air Fryer Chicken Nuggets and had to fight off the family just so that I could get them photographed! They are SO TASTY.

There are a few things to know about this recipe. One is that if you use ground chicken breast, you need to be careful not to cook too long or it will dry out.

If you want to use chicken breasts, I suggest adding a half tablespoon of mayo to the mixture.

I also used Porking Good crushed pork rinds for the breading. You can order them here or you can simply grind up your own pork rinds using a food processor.

The spices I added have just a little bit of heat. If you want to crank it up a notch, my Spicy Chicken Nuggets Recipe has quite a kick.

The Air Fryer cooks these perfectly - keeping the chicken juicy while getting the breading good and crispy.

To reheat, put back into air fryer for 2-3 minutes, or wrap in a damp paper towel and microwave 30 seconds. Let sit for a minute before eating.

These Air Fryer Chicken Nuggets are also perfect to cut up and toss into a big salad. Top with my Keto Ranch Dressing for a macro-perfect meal in less than 20 minutes.

Air Fryer Chicken Nuggets

Ingredients:

  • 1 lb ground chicken
  • 1 cup grated parmesan cheese, divided
  • 1 egg
  • 1 teaspoon salt
  • 1 teaspoon pepper

I was never a big pizza fan, but since going keto I have found myself wanting it more and more. My husband would live on pizza alone if I let him, so I make sure to have a pizza-style something often.

My Pizza Zucchini Casserole is always a hit, but I wanted something a little more quick and easy... and this pizza stuffed hasselback chicken did not disappoint.

You can stuff whatever your favorite pizza toppings are right into the hasselback chicken. I only had pepperoni and mozzarella on hand, but some green bell pepper, mushrooms, and sausage would be delicious too...and keto!

The best part is you can throw it all together and bake and serve. It does not get any easier than that.

This hasselback chicken preheats perfectly too so it is great for weekly meal prep. Pair with a low carb veggie or salad and voila - easy meal that can be reheated quickly.

Taylor even loved taking it to school for a hot school lunch that only takes a minute to reheat. Since the chicken is already sliced it heats up quickly.

The "Hasselback" style of cooking is said to have derived from Stockholm, Sweden in the 1700s to make "the perfect potato." But Hasselback Chicken has become increasingly popular for making delicious low carb dinners easily.

Hasselback is simply thinly slicing one ingredient to easily place other ingredients inside to more evenly distribute the flavor... plus it gives a beautiful presentation.

You can make Hasselback Chicken with any of your favorite ingredient combos! This Keto Caprese Hasselback Chicken was inspired by my Keto Caprese Stuffed Hamburgers - anoher family favorite of ours.

Keto Caprese Hasselback Chicken Breasts

Ingredients:

  • 5 Large boneless skinless chicken breasts
  • 1 tablespoon Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoon Balsamic vinegar
  • 5 Slices of tomato
  • 5 Slices of fresh mozzarella cheese (about ½ oz each)
  • Fresh baby spinach
  • Salt and pepper to taste

Instructions:

Preheat the oven to 350 degrees.

Coat the chicken breasts in the olive oil, garlic powder, Italian seasoning as well as salt and pepper to taste. Rub the mixture in to coat both sides of the chicken.

Drizzle 2 tablespoon of balsamic vinegar over the chicken breasts.

Using a sharp knife, cut 6 slits lengthwise down the top of each chicken breast. Make them as deep as you can without cutting all the way through the chicken breasts.

Stuff two of the slits in each chicken breast with half of a slice of mozzarella cheese each. Stuff another two with fresh baby spinach, and the last two with half of a slice of tomato each.

Bake the chicken for 40 minutes until completely cooked through.

Serve with freshly chopped basil for garnish.

Keto Chicken Tacos with Low Carb Wraps

These Keto Chicken Tacos with Low Carb Wraps are a simple meal that the whole family will love!

I absolutely love tacos, but finding good low carb wraps since going keto has been a bit of a struggle. Sure there are products you can buy that claim to be low carb, but they often are still made with ingredients that are inflammatory or cause a spike in insulin.

Using my cloud bread recipe with a few tweaks, they became the perfect substitution for low carb tortillas - giving even more great flavor to these keto chicken tacos!

Keto Chicken Tacos

Ingredients:

For the Chicken:

  • 1 lb. Boneless skinless chicken breasts or thighs cut into chunks
  • Juice from ½ a large lemon or a whole small lemon
  • 2 tablespoon Olive oil
  • 2 Cloves garlic minced
  • 2 teaspoon Garlic herb seasoning
  • Salt and pepper to taste

For the Cloud Dough Wraps:

  • 3 Eggs
  • 3 oz Softened cream cheese
  • ½ teaspoon Thyme
  • ½ teaspoon Baking powder
  • Salt to taste

Instructions:

Place the chicken pieces into a mixing bowl. Add in the olive oil, lemon juice, minced garlic, garlic herb seasoning as well as salt and pepper to taste.

Massage the marinade into the chicken until all ingredients are combined well. Cover, and refrigerate for at least 30 minutes.

Preheat the oven to 350 degrees.

Separate the eggs into two different bowls. Place the yolks in one bowl, and the whites in another.

To the bowl of egg yolks, add 3 ounces of softened cream cheese, and whisk until smooth and creamy.

To the bowl with the egg whites, add in ½ teaspoon of baking powder, and using a hand mixer beat on high until the egg whites form stiff peaks.

Fold the egg yolk mixture into the egg whites gently.

Add in ½ teaspoon of thyme and salt to taste, stir with a spatula until just combined.

Line a baking sheet with parchment paper or a silicone baking mat.

Place large spoonfuls of the cloud dough mixture onto the baking sheet, and spread it out with the back of a spoon to form a thin circle. You should be able to make 8 cloud dough wraps with this amount of dough.

Bake the wraps for 15 minutes until golden brown on top. Remove from the oven, and use a spatula to place them in a single layer on a plate to cool immediately.

Heat a skillet over medium high heat.

Add the chicken to the skillet, and cook for 5-6 minutes, or until the chicken is browned and completely cooked through.

Place the cooked chicken as well as any keto friendly toppings on the cloud dough wraps, and serve immediately.

Foil pack dinners are all the rage because they are so easy to make and have tons of great flavor! In just about 35 minutes you can be serving your family a delicious, healthy low carb dinner that they will love.

Chicken Bacon Ranch is like the flavor trifecta - and adding just a bit of cheddar cheese makes this a meal you cannot resist.

Chicken Foil Packet Meals are perfect for keto meal prep as everything cooks together quickly, and reheats perfectly!

Try this Keto Ranch Dressing too!

Keto Cheesy Bacon Ranch Chicken Foil Packet Dinner

Ingredients:

  • 1 lb Boneless skinless chicken breast cut into bite sized pieces
  • 4 c Broccoli
  • 1 c Shredded cheddar cheese
  • 4 Slices cooked bacon
  • 1 teaspoon dill
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon sea salt
  • 1 tablespoon Olive oil
  • Aluminum foil

Instructions:

Preheat the oven to 350 degrees.

In a bowl, mix dill, garlic powder, onion powder and sea salt. Pour over chicken and toss to combine.

Place the chicken pieces into a mixing bowl, and top with 1 tablespoon of olive oil. Mix well.

Cut 6 pieces of aluminum foil about 15 inches long each.

Lay them on a flat surface, and place ⅔ cup of broccoli into the center of each sheet.

Top the broccoli with some more of the Ranch seasoning mix if desired.

Place a handful (about ⅓ c) of seasoned chicken on top of the broccoli.

Top the chicken with ⅓ cup of shredded cheddar cheese.

Crumble 1 piece of cooked bacon on the top of each foil meal.

Fold up the edges of each tin foil sheet lengthwise, and fold them over to seal them together.

Fold up each of the ends of each piece of tin foil to form a sealed packet.

Place the packets on a baking sheet, and bake for 25-30 minutes until the chicken is cooked through.

Serve with your favorite salad for a perfectly balanced ket meal!

Bell peppers are in season right now in Florida - and I am completely obsessed with eating as many as possible. Bell peppers are a relatively low carb vegetable that can be eaten in so many ways I never get bored.

How To Pick The Best Bell Pepper

Besides looking for bell peppers that are nice and firm and vibrant in color, you also want to check the bottom of your bell peppers when shopping. Bell peppers with four "bumps" on the bottom tend to be a bit sweeter than ones with only three.

Since I knew I was making a savory chicken kabob marinade, I chose bell peppers on the sweeter side to help balance out the flavors. It was perfect!

How To Make Low Carb Chicken Kabobs

Start by getting all of your veggies washed and chicken cut into chunks and ready for your skewers.

In a small bowl, mix your chicken kabob marinade ingredients well.

Whisk together and pour ⅓ of the mixture over your chicken. Cover and refrigerate while you prep the vegetables.

While the chicken marinates, cut your bell peppers into chunks, remove stalks from mushrooms, and prepare other veggies you have chosen for your chicken kabobs.

Using wooden kabob skewers begin layering your kabobs - really pushing all of the ingredients together for a good tight fit.

Line up on your grill or on your air fryer oven trays. If using the air fryer oven, cook at 370* for seven minutes.

Remove trays and put remaining low carb chicken marinade on using a basting brush. Flip kabobs and cook for another seven minutes or until chicken is cooked through and veggies are browning.

Instructions

They have just enough spice to give you a little kick, but are not too spicy so that they are still a kid friendly keto recipe!

Keto Spicy Chicken Nuggets

Ingredients:

  • 2 lb. Boneless skinless chicken tenderloin strips
  • 2 Eggs, beaten
  • 1 c. Crushed pork rind crumbs
  • 1 teaspoon Oregano
  • 1 teaspoon Onion powder
  • 1 teaspoon Garlic powder
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • ½ teaspoon Paprika
  • Pinch of red pepper flakes (optional)
  • Salt and pepper to taste
  • Oil for frying (I use avocado oil) or an air fryer to use instead if desired

How To Make Spicy Chicken Nuggets

Begin by placing your oil into a deep skillet or pot, and heating it over medium high heat on the stovetop. If you are using an air fryer instead, begin to get it preheated if needed.

Cut the chicken tenderloin strips into bite sized “popcorn” pieces.

In a shallow bowl, place the two beaten eggs plus salt and pepper to taste.

In a separate shallow bowl, combine the crushed pork rind crumbs, oregano, garlic powder, onion powder, chili powder, cumin and paprika. Mix to combine all of the ingredients together well.

Dredge the chicken nugget pieces in first the egg mixture, and then coat them in the pork rind crumb mixture. Place them onto a plate until you have finished coating all of the chicken pieces.

Place the chicken pieces into the heated oil with tongs. Cook for 5-6 minutes until browned on the outside and fully cooked on the inside. Be careful not to heat your oil on high heat. If your oil is smoking, the outside of your spicy chicken nuggets will burn before the inside is fully cooked.

Serve with your favorite keto approved dipping sauces.

This Low Carb Chicken Casserole is so easy to make you will not even miss the carbs! Creamy and cheesy and packed with nutrients, this one the whole family will love!

I chose spinach to put in this low carb casserole, but you can really use any veggie you like. The creamy sauce goes well with just about anything!

This Easy Low Carb Chicken Casserole can be made with a precooked rotisserie chicken, canned chicken, or even grilled chicken.

Even though this casserole has spinach in it already, I love pairing it with my Roasted Low Carb Veggies. I just run everything into the oven at the same time and voila!

Low Carb Chicken Casserole with Spinach

Ingredients:

  • 10 oz. Fresh spinach
  • 1 tablespoon Olive oil
  • 2 tablespoon Butter unsalted
  • 1 ½ c. Heavy whipping cream
  • ¾ c. Parmesan cheese
  • 1 teaspoon Garlic powder
  • 1 teaspoon Basil
  • 1 lb. Shredded chicken
  • ½ c. Mozzarella cheese + a bit more for topping
  • Salt and pepper to taste
  • Fresh parsley for garnish

How To Make Chicken Casserole

Preheat the oven to 350 degrees.

Heat 1 tablespoon olive oil in a large skillet over medium heat.

Add the spinach to the heated skillet a little at a time, and cook until wilted. I use my cast iron skillet for this and it comes out perfect every time!

Drain the spinach, and spread it on the bottom of a greased baking dish.

In the same skillet, melt 2 tablespoon of butter.

Pour in the heavy whipping cream.

Whisk in the Parmesan cheese, garlic powder and basil.

Stir in the mozzarella cheese.

Add salt and pepper to taste.

Mix in the shredded chicken.

Spread the chicken mixture evenly over the spinach in the baking dish.

Top with a thin layer of Mozzarella cheese.

Bake for 20-25 minutes until the cheese is browned and bubbly.

Garnish with freshly chopped parsley and serve.

This Keto Chicken Stir Fry is a simple weeknight meal that the whole family will love. Super easy to make and saves well - making it a great keto lunch idea too!

My husband loves stir fry, and one of the reasons we have both been so successful is that I have made keto variations of all of our favorite foods. Making a keto stir fry was a no brainer.

First, if you have not added coconut aminos to your Keto Kitchen, order this right now. Coconut Aminos are very close to the flavor of soy sauce but have a buttery flavor that enhances flavor even more!

I also use them in my Keto Egg Roll in a Bowl! So yummy!

I also used Swerve Brown Sugar Substitute to give this keto stir fry recipe but a touch of sweetness. I have not seen this in the stores yet, but I am holding out hope it will be there soon. Until then I get mine from Amazon.

Keto Asian Chicken Stir Fry

Ingredients:

  • 2 lbs. Boneless skinless chicken thighs
  • ¼ c. Low sodium soy sauce or coconut aminos
  • 2 tablespoon Lemon juice
  • 2-3 tablespoon Swerve brown sugar substitute
  • 1 teaspoon Garlic powder
  • 2 teaspoon Sesame oil
  • 1 teaspoon Rice vinegar
  • ¼ teaspoon Black pepper
  • 1 Medium sized zucchini sliced
  • 1 Medium sized yellow squash sliced
  • 2 Bell peppers chopped
  • ½ Medium onion chopped
  • 2 tablespoon Olive oil
  • Salt and pepper to taste

How To Make Keto Stir Fry

Place 2 lbs of boneless skinless chicken thighs into a large mixing bowl.

Add the coconut aminos, lemon juice, brown sugar substitute, garlic powder, sesame oil, rice vinegar and black pepper to a small mixing bowl, and stir to combine.

Pour the mixture over the chicken, and toss to coat well. Place the chicken in the fridge to marinate for 30 minutes.

While the chicken is marinating, prepare the vegetables. Slice the zucchini and yellow squash. Chop the onion and bell peppers into large bite-sized chunks, and combine all the prepared vegetables in a mixing bowl.

Heat a large skillet over medium-high heat with 1 tablespoon of olive oil in the bottom.

Add the chicken to the skillet, reserving the leftover marinade for later.

Cook the chicken for 5-7 minutes on each side until it is seared well and completely cooked through.

Remove the chicken from the skillet, and add another tablespoon of olive oil.

Pour the chopped vegetables into the heated skillet, and add salt and pepper to taste. Cook until the vegetables are a crisp tender.

Slice the cooked chicken thighs into strips, and add them back into the skillet with the vegetables.

Reduce the heat to medium-low, and pour in the rest of the reserved marinade. Cook for another few minutes tossing the ingredients to coat them well in the sauce.

Serve the stir fry on its own, or with your favorite keto-friendly side.

You can use store-bought pesto for this recipe, but a lot of them sneak in sugars and hidden ingredients you do not need.

This recipe serves six... oooorrrr makes weekly meal prep really easy! I just pair this with my favorite salad and voila - easy meal in minutes! This also goes great with my Easy Keto Broccoli Bites!

Keto Pesto Chicken Recipe

Serves 6

Ingredients:

  • 3 Large boneless skinless chicken breasts
  • 1 tsp. Garlic powder
  • 1 tsp. Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp. Olive oil
  • 6 tbsp. Homemade pesto
  • 1 c. Shredded mozzarella cheese

Instructions:

Preheat your oven to 400 degrees.

Slice each chicken breast in half lengthwise so that you end up with 6 pieces of chicken.

Sprinkle salt and pepper to taste on each side of the chicken.

Coat each side of the chicken with 1 teaspoon of garlic powder.

Add 1 teaspoon of Italian seasoning to the chicken breasts.

Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the chicken to the hot skillet, and sear on each side for 1-2 minutes.

Remove the chicken from the skillet, and place it in a single layer within a high sided casserole or baking dish.

Top each piece of chicken with 1 tablespoon of homemade pesto.

Sprinkle 1 cup of shredded mozzarella cheese over top of the chicken pieces.

Bake the chicken for 25-30 minutes, or until it is cooked through and the top is browned and bubbly.

Serve with your favorite Keto Side Dish and a big salad for the perfect Keto Friendly Dinner!

It is almost party season and I have already begun planning how to stay on track with keto through the holiday season. Holiday parties are always filled with food and my goal is to take an easy keto appetizer to every one of them. These Keto Buffalo Chicken Meatballs are easy and always a crowd favorite. 

This is a recipe for ground chicken meatballs, but you can also use ground turkey and they are just as good! 

They are also easy to make ahead of time so you can easily reheat them and they are ready to go!

I think Keto Buffalo Chicken Dip is a standard favorite, but these baked chicken meatballs are just as delicious and easier for feeding a crowd.

Simply stick toothpicks or skewers in the top and voila! Your favorite chicken dip is now one of your favorite keto finger foods!

Ingredients: 

  • 1 pound ground chicken

How To Make Ground Chicken Meatballs

Mix well to combine.

Use a small cookie scoop to form the mixture into meatballs and line up on parchment lined cookie sheet.

Bake 18-20 minutes. Make sure the meatballs are fully cooked all the way through. 

While the meatballs are cooking, combine the hot sauce and butter mixing well.

Once the meatballs are cooked through gently toss in the buffalo sauce. 

Coat well. Using toothpicks take out each one and arrange on a party platter. Serve with ranch or blue cheese dressing.

Ingredients:

  • 3 Large boneless skinless chicken breasts
  • 2 tsp. Garlic powder
  • 1 tsp. Basil
  • Salt and pepper to taste
  • 1 tbsp. Olive oil
  • 12 tbsp. Low carb Marinara sauce
  • 1 c. Mozzarella cheese
  • 24 Pepperoni slices

Instructions:

Preheat the oven to 400 degrees.

Slice the three chicken breasts in half lengthwise to create 6 pieces of chicken.

Sprinkle 2 teaspoon of garlic powder evenly over both sides of the chicken breasts.

Add ½ teaspoon of basil to each side of the chicken breasts.

Apply salt and pepper to taste to each side of the chicken.

Heat 1 tablespoon of oil in a skillet over medium-high heat. Once the skillet has come to temperature, add the chicken breasts.

Sear them for 1-2 minutes on each side without moving, so that they get some good color.

Place the chicken breasts in a single layer in a casserole dish or other baking pan with high sides.

Cover each piece of chicken breast with two tablespoons of a low carb marinara sauce.

You can substitute this with any other low carb pasta or pizza sauce of your choosing, just make sure that sugar is not in the ingredients.

With football season starting up and the holidays just around the corner I have already started thinking about Keto Appetizers to take to all of the fun fall festivities. First up - Chicken Stuffed Keto Jalapeno Poppers!

Jalapeño Poppers have long been a go to favorite for game day parties, holiday parties, and just as a simple low carb snack. 

Now I am not a huge fan of spicy food, but these have just enough kick. The creaminess of the cheese and cream cheese help cool it off in the most savory, delicious way. It is hard not to eat them all! 

The best part too is these are super quick to make and can be made even a couple days ahead of time and reheated for your party. Who doesn't love a Bacon Wrapped Jalapeno Popper!?

It is amazing how tasty just five simple ingredients can be - but that is one of the things I love most about the Keto Lifestyle - the food is simple and delicious!

Chicken Stuffed Keto Jalapeno Poppers

Ingredients:

  • 1 oz. Canned chicken well drained
  • 2 oz. Cream cheese
  • 1 oz. Shredded cheddar cheese
  • 2 Strips thick cut bacon
  • 4 Medium jalapeno peppers
  • Salt & Pepper to taste (optional) 

How to make Jalapeno Poppers

  • Preheat your oven to 375 degrees.
  • Cut the top off of each Jalapeno pepper, and then slice them in half. Use a spoon to scoop out the insides, including the seeds.
  • Add 1 ounce of canned chicken to a small mixing bowl.
  • Mix in 2 ounces of cream cheese and 1 ounce of shredded cheddar cheese.
  • Sprinkle in pepper to taste if desired.
  • Mix all the ingredients together well.
  • Fill each of the jalapeno pepper halves with the cream cheese and chicken mixture until you have used it all.
  • Cut the slices of thick cut bacon in half lengthwise and then in half again horizontally. This will give you 4 pieces of bacon per strip.
  • Wrap a piece of bacon around each of the stuffed jalapeno peppers.
  • Place the peppers on a baking tray lined with aluminum foil, or on a baking rack that sits within a sheet pan.
  • Bake the peppers for 15-20 minutes or until the bacon is crispy and the peppers are starting to become tender.

Ever since my family and I began the keto diet last year, I have enjoyed finding low carb recipes that are easy to make and that everyone loves. Bacon Wrapped Chicken became a favorite early on, so I wanted to add a bit more flavor to change it up.

I think my favorite part about this recipe is that it is ingredients that I literally always have on hand. So even in a pinch I can throw it together and have a nutritious meal everyone loves. If you are looking for low carb dinner ideas, this one is perfect.

First of all, I am not sure why I have not always used a meat tenderizer on chicken breasts. Not only is it amazing stress relief, but it truly does make the chicken so much more tender! I have started using this thing for all of my keto chicken recipes!

Once you have tenderized your chicken, simply stuff, secure, and wrap! Voila! Perfect stuffed chicken breast! I mix this recipe with garlic and onion powder, but you can also add in some red pepper flakes to give it a kick!

One thing to make sure - when you are securing the chicken with toothpicks, make sure you do to put them too close to the edge of the meat. Since you have tenderized it you have to make sure you give it enough to keep a secure hold.

The same is true for the bacon. Even though you will be starting with it partially cooked - a huge part of the success for bacon wrapped chicken breasts - it will tear easily if there is not enough to hold.

Bacon Wrapped Spinach Stuffed Chicken Breasts

A delicious, fast, simple keto recipe full of flavor! Perfect for weekly meal prep too! 

Prep Time 10 minutes
Cook Time 45 minutes
Total Time 55 minutes

Ingredients

  • 4 medium boneless skinless chicken breasts
  • 6 oz cream cheese, softened
  • 8 oz frozen spinach, thawed and patted dry
  • ½ tsp. onion powder
  • ½ tsp. garlic powder
  • salt & pepper
  • 10 slices of bacon, partially cooked
  • toothpicks

Instructions

  1. Preheat the oven to 350 degrees.
  2. Partially cook the 10 slices of bacon, you don't want them crispy but you want them cooked about halfway.
  3. Use a meat tenderizer to flatten the chicken breasts and salt & pepper them.
  4. Combine the cream cheese, thawed spinach, onion powder and garlic powder mixing well.
  5. Gently spread the mixture in the middle of each chicken breast and gently roll it up. Secure with 1-2 toothpicks.
  6. Gently wrap 2-3 bacon slices around the chicken breast and secure with toothpicks. I gently removed the previous toothpick and re-inserted to hold the bacon and chicken together.
  7. Once the chicken breasts are stuffed and wrapped, place in a baking dish.
  8. Bake for 35-45 minutes or until cooked through.

It seems like the entire country is under a freeze warning right now. Even down here in Florida, we are experiencing some of the coldest temperatures in decades. With weather like this, all I want to do is curl up and hibernate with a good book and a bowl of soup.

Since going keto I have missed soup - especially Chicken Noodle. In an attempt to recreate my favorite I have come up with a close alternative. While it isn't exact - it is darn close. And it is perfect for nights like these.

I love a chicken soup full of chicken, but you have to have those noodles to really bring it all together. I wanted something to take the place of noodles but with added benefits to make this a powerhouse soup.

Hearts of Palm is very low in Cholesterol and a good source of Protein, Riboflavin, and Potassium, as well as Dietary Fiber, Vitamin C, Folate, Calcium, Iron, Magnesium, Phosphorus, Zinc, Copper, and Manganese.

It *is* one of those ingredients you want to measure properly so you do not go over on your macros, but used sparingly they can give just enough of that "noodle" feel without all of the processed flour from traditional noodles.

If you are searching for keto-friendly recipes to create throughout the cool fall and winter this noodle-less chicken noodle soup is the stuff keto dreams are made of.

Ingredients

  • 1 ½ cups cooked chicken, cubed
  • 4 cups chicken broth
  • ½ can hearts of palm
  • ½ small onion
  • 2 celery stalks
  • 4 baby carrots, optional
  • 1 tsp. oregano
  • 1 teaspoon parsley
  • 1 teaspoon basil

Instructions

  1. Finely dice onions, celery, and carrots. Carrots are a carbier veggie, it’s up to you if you want to use them or not, I only used 4 small baby carrots for my entire pot of soup because I wanted a traditional chicken soup flavor and it was worth the little bit of carbs they added to the pot for me.
  2. Cut hearts of palm into long thin strips to resemble noodles, they are a bit stringy and will come apart more when they cook down a bit so I like to leave mine a little larger to get an egg noodle texture.
  3. In a large pot saute onions, celery, and carrots in a small amount of oil until softened and caramelized.
  4. Add the chicken stock, herbs, hearts of palm, and diced chicken to your sauteed veggies.
  5. Reduce heat to low and simmer, covered for 20 minutes.
  6. Salt and pepper to taste.

It seems like evenings have become so rushed around here that I am constantly looking for quick, healthy meals. Mike introduced me to stuffed peppers years ago, and while we love them... they take a while to prepare. I was determined to shorten that time to make something just as delicious and made with fresh ingredients. When I had the chance to team up with Fresh From Florida to show off just how fresh and delicious our local produce really is, I knew this was the perfect time to see what I could come up with!

It would be impossible for me to choose a favorite - but we absolutely love their peppers and berries and squashes! I always look for the Fresh From Florida label when I do my shopping at my local farmers market. It is one of the perks of living in Florida for sure! I mean - look at these peppers?!! How beautiful are they!?

On a particularly busy night, I stopped by the store to grab everything I needed for my Chicken Enchilada Stuffed Peppers. My goal was to get something hot and delicious - and healthy - on the table in under 30 minutes. The recipe DID make a lot - but it worked out perfectly that we were able to have some for lunch the next day or you could even freeze the mixture to use later!

30 Minute Chicken Enchilada Stuffed Peppers

30 Minute Chicken Enchilada Stuffed Peppers
Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes

Ingredients

  • 8 large Fresh From Florida bell peppers
  • 2 rotisserie chickens
  • 1 can red enchilada sauce - mild
  • 1 can black beans
  • 1 can niblet corn
  • 3 cups shredded cheddar cheese, divided

Instructions

  1. Preheat your oven to 350*.
  2. Remove and shred meat from chickens into a skillet on medium heat.
  3. Add in sauce, corn, and black beans.
  4. Simmer about 5 minutes.
  5. Add in 2 cups of shredded cheese and stir until well combined.
  6. Cut tops off bell peppers and remove seeds and ribs.
  7. Gently spoon chicken mixture into peppers and top with remaining cheese.
  8. Bake uncovered about 15-20 minutes or until peppers have softened and cheese is bubbly.
  9. Remove and let sit about 5 minutes.
  10. Top with sour cream and or guacamole.
  11. Enjoy!

This meal was definitely a crowd favorite - both at dinner that night and the leftovers the next day for lunch! I might even say they were even BETTER the next day because the sweetness of the peppers really came through! Since I almost always have bell peppers on hand, this is a meal we will enjoy often on our busy weeknights. The peppers stay nice and crisp while the inside is all gooey and cheesy! SO delish!

These Whole30 Stuffed Bell Peppers will help keep you on track while satisfying your craving for stuffed peppers.

Before I did my first round of Whole30, it was an ongoing joke that I was a terrible cook. I would tell people that I could mess up a bowl of cereal - I mean it was bad. (You may remember my struggle to boil eggs.)

Anyway, after about a week on whole30 - when I was so sick of eggs I wanted to scream - I began to venture out and try new things. Turns out I am actually a great cook, and somewhere before I hit day 30 I fell in love with being in the kitchen. Who would have thought.

When I had the opportunity to work with Collective Bias and ConAgra this week to create a new Mexican-inspired recipe, I was stoked. Everyone knows that I would eat Mexican food every single day if I could, and since I am at the end of a whole30 round I was excited to create something that was not only tasty, but compliant, and would cure my craving for a delicious Mexican dish.

I looked through cookbooks, perused on Pinterest, but could not find what I wanted. That left me - alone in a kitchen - to come up with something amazing. Mission: Accomplished.

One thing I have learned with whole30 is to really enjoy the natural taste of food. I prefer minimal ingredients now and love to let the flavors really shine through.

Plus let's be real - busy moms want simple and delicious recipes their family will love - no one has time for 82 ingredients or spending two hours in the kitchen. Good news is when you use the best ingredients - it is easy to make a meal delicious with only a few steps.

I had about 10 minutes to shop and 40 minutes to cook - so I knew I had to get creative. I have become completely obsessed with cauliflower rice, and I want to put fresh cilantro on everything these days, so that is where I began.

Close to the cauliflower I found perfect little bell peppers and an idea was born. Next thing I knew I had my buggie half filled with delicious fresh produce and I was heading off to find my tomatoes.

A quick trip through the meat section and voila - 9 minutes later and I am ready to roll!  I came home, got to cooking, and before my time was up I was serving a delicious Mexican meal - that even my Mexican fiance was impressed by! Go me!

This recipe makes a LOT of stuffing - which is great because it heats up perfectly the next day. In fact I have been eating it warmed up with just some fresh guacamole on top!

I only have a few days left of my whole30 - but this recipe will absolutely stay in our rotation no matter what. I loved it, Mike loved it, and the girls loved it so much they even took leftovers to school today. I call that a super big win.

Ingredients

  • 1 head cauliflower "riced"
  • 1 can Diced Tomatoes
  • 1 lb ground turkey breast
  • 5 large bell peppers
  • 4 tablespoon olive oil
  • 1 cup chicken stock
  • 1 teaspoon basil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic salt
  • 1 tablespoon cumin
  • fresh cilantro to taste

Instructions

  1. Begin by browning your turkey in a deep skillet until no pink is left. Put in a bowl and set aside.
  2. In the same skillet brown your cauliflower "rice" until cooked through and beginning to brown.
  3. Add in your cooked turkey, tomatoes, chicken stock and seasonings.
  4. Let simmer about 5 minutes or until stock is absorbed - stirring often to prevent sticking.
  5. Cut the tops off fresh bell peppers and remove seeds and ribs. Place in a deep baking dish - nestling them in together so they will stand up.
  6. If you like your peppers soft, you can bake them empty for about 10 minutes before filling. Since we like them firm I immediately stuffed and baked them in the oven at 350* for about 20 minutes or until tops begin to brown.
  7. Serve with your favorite whole30 guacamole!

Buffalo Chicken Mac - Meals Made Easy With Kraft

For as long as I can remember, Kraft Macaroni & Cheese has been a staple in my household. As a little girl, I remember piling those little blue boxes in my mom's shopping cart. When I was a teenager I remember preparing Kraft Macaroni & Cheese for the children I was sitting for... while eating some myself of course. Now as a mom I love serving Kraft Macaroni & Cheese to my family. It has always been my "go to" side, but I never thought to make it as a main dish. When I saw the recipe for Buffalo Chicken Mac on the Kraft Recipe Hub I knew I had to try it - and make our "favorite side" a new "favorite dish."

This recipe was not only super tasty, but super easy. In fact, I had all of the recipes on hand. This would be perfect for a party or for an every day meal for your family. The creaminess of the Kraft Deluxe mixed with the zing of the buffalo sauce made this an easy favorite.

The original recipe calls for green onions, but we have recently found out that Mike is actually allergic to onions, so I left that part out. I paired it with some fresh steamed broccoli and hot rolls and it was the perfect meal. Better yet it only took about 30 minutes to make from start to finish and we had enough for my family of four plus leftovers for lunch the next day.

I cooked my chicken breasts using the NuWave, but you can cook it however you want. To save time you could even pick up a rotisserie chicken and shred it. This would even be great to make with leftover turkey! This recipe is so easy even the girls can make it - especially since there is no need for a bunch of measuring. Kraft Deluxe cheese sauce is already ready to go - simply snip the corner and pour.

I love Fall.  It is my absolute favorite time of year.  Though I don't like COLD weather, I do like nice crisp mornings and snuggling up with Mike in front of the fire in the evenings... following an amazingly tasty meal.  This year I am already preparing for the holidays by making recipes that are as healthy as they are delicious - and even sometimes making myself a completely different meal than my family... after all, *I* am on this diet, not them.

Tonight I made my very first ever Chicken Pot Pie - a "healthy-ish" version for me, and a "normal" version for them.  To be honest... I could not tell the difference between the two.  Both of them were delicious and I am excited to have a new, simple meal to add to my repertoire.

This Healthy Chicken Pot Pie is delicious any time of year - but it is especially perfect for Halloween!

Ingredients

  • 1 ½ c 2% milk
  • 1 medium onion, , chopped
  • 2 rotisserie chicken breasts – cubed
  • 3 tablespoon flour
  • 1 teaspoon poultry seasoning
  • ½ teaspoon pepper
  • 1 98 % fat free can cream of chicken soup
  • assorted canned vegetables – corn, , lima beans, green beans, carrots, etc
  • 2 pie crusts

Instructions

  1. In a medium sauce pan, mix milk, pepper, flour, and poultry seasoning together over medium heat.
  2. Stir in chopped onion and cook about 4 minutes or until sauce is thickening and onions are soft.
  3. Add cream of chicken soup and mix well.
  4. Slowly add in cooked chicken and vegetables and mix well, lowering heat to low.
  5. Spoon mixture into empty pie crust. Gently lay second pie crust over top and using a sharp knife, cut out eyes, nose, and mouth and discard cutouts. Use extra dough to make a “stem” if desired.
  6. Bake 30-35 minutes or until edges are bubbly and crust is browned.
  7. Serve hot.

I am not sure why, but growing up I always said I "hated" chicken pot pie. I am not sure why I thought that - since I honestly couldn't ever remember actually trying a chicken pot pie, but I always thought that I did not like it. When I met Mike I quickly learned it was one of his all time favorites - loosely translating into "Lynsey you better figure out how to cook this." I set out to create the perfect chicken pot pie - having no intention of even taste testing along the way. However, after a couple of attempts I concocted one that smelled so good while cooking, I could not resist trying it once it was finished. I've been hooked ever since.

This recipe is super simple - and super delicious. You can prepare it as a traditional pot pie, or - how my family prefers it - a "deconstructed" version over your favorite biscuits. Unlike most chicken pot pies that take forever to cook, this one takes less than 30 minutes from start to finish - and that includes chopping the onion!

This is one recipe we never have leftovers for. The girls literally fight over who gets the last biscuit. One of these days I am going to have to double the recipe so I can have it for lunch the next day. It is so quick and easy and made with ingredients we normally have on hand, so it is perfect for a cold night meal to get us warm inside. Never again will I say I hate chicken pot pie - I LOVE IT!

Simple Chicken Pot Pie Recipe

This is the easiest Chicken Pot Pie recipe ever! Great flavor and simple ingredients, this is the perfect weeknight meal in minutes.

Ingredients

  • ⅓ cup butter or margarine
  • ⅓ cup finely chopped onion
  • ½ cup celery, , chopped
  • ⅓ cup all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon pepper
  • 1 ¾ cups chicken broth
  • ½ cup milk
  • 1 rotisserie chicken – shredded
  • 1 package frozen mixed vegetables, , steamed
  • 6 small red potatoes, , cubed and boiled
  • 1 can of biscuits -or- pie crusts

Instructions

  1. Melt butter in a saucepan over medium heat.
  2. Add onion and celery and cook, stirring constantly until onions and celery are soft.
  3. Add flour and seasonings and mix well.
  4. Gradually pour in milk and chicken broth, stirring constantly to mix thoroughly.
  5. Stir until it begins to bubble and thickens.
  6. Pour in vegetables, potatoes, and shredded chicken.
  7. Let cook on low for 15 minutes, stirring often to prevent sticking.
  8. Then spoon over baked biscuits or spoon in to pie crusts and bake for an additional 30 minutes or until crust is golden brown.
  9. Let pie stand 5 minutes before serving.

Healthier Chicken Parmesan

Last week I was approached by Tuttorosso Tomatoes to talk about their newest promotion - #CelebrateYourTradition - where you can enter to win a prize package of $550 just for sharing one of your family's favorite traditions and who inspired it! Since I have already shared my Dad's Simple Spaghetti Recipe (in which I also use Tuttorosso Tomatoes) I decided to make one of Mike's favorites - Chicken Parmesan.

And since we are both wanting to eat healthier I made just a few small adjustments to bring down the calories, without giving up any of the flavor. What we ended up with was something all four of us agreed was the best meal to come out of my kitchen.

This meal was loved so much I know it is going to be a new "tradition" that we will do around here often. And since it is healthier than restaurant style chicken parmesan - we can feel better about making it from home.

I can also attest to the fact that it is even better the next day - as I am sitting here having the leftovers for lunch! And according to my calculations in MyFitnessPal, each serving is less than 320 calories. Talk about Guilt Free Deliciousness!

Healthier Chicken Parmesan – Tuttorosso Tomatoes

Save on carbs and calories without losing flavor with this Healthier Chicken Parmesan.

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 teaspoon dried Italian seasoning
  • ½ c flour
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 3 egg whites
  • ½ c water
  • 2 cups Rice Chex cereal, , crushed
  • 2 tablespoons grated parmesan cheese
  • 4 tablespoon olive oil
  • 1 can Tuttorosso No Salt Added Crushed Tomatoes
  • 1 c shredded low fat mozzarella cheese
  • whole wheat pasta

Instructions

  1. Preheat oven to 425*. In one bowl lightly beat egg whites and water together.
  2. In another bowl put flour, salt, and pepper.
  3. In another bowl, mix crushed Rice Chex with Italian seasoning.
  4. Working with one chicken breast at a time, first coat with flour, then dredge through egg white mixture and then place into the cereal mix and press until well coated on both sides.
  5. Put Olive oil into a large skillet and heat over medium heat.
  6. Place pieces of coated chicken into skillet and cook until chicken is just cooked through – about 3 minutes on each side.
  7. Then transfer chicken to a 9 x 13 baking dish and top each piece evenly with crushed tomatoes and mozzarella cheese.
  8. Bake until the cheese is melted and lightly browned and chicken is completely cooked – about 20-25 minutes.
  9. Serve over whole wheat pasta.

Mango Chicken Quesadillas - Cinco de Mayo

In just a few weeks we will be celebrating Cinco de Mayo - one of my favorite holidays. Mike's Mom is Mexican and has taught me how to cook some of THE most amazing dishes. Seriously I could eat Mexican food all day every day. One of the highlights of my trip to Cozumel was all of the Mexican food! Today this recipe landed in my inbox and I can not wait to try it. Everything about it - including it being healthy - sounds like something I could just devour. Plus I love any recipe that doesn't require a ton of cooking - hey, quick and easy is how I do food around here.

Cinco de Mayo commemorates the Mexican army’s victory over France at the Battle of Puebla during the Franco-Mexican War, and has evolved into a celebration of Mexican culture and heritage. Celebrations in the United States often extend beyond the actual day to encompass an entire week, with parades, festivals and fiestas that include music, dancing, and food. A dish like Mango Chicken Quesadillas takes the very traditional Mexican dish but combines shredded chicken with brown mustard, honey and Tabasco creating a flavorful filling and adding mango for a sweet twist. Easy Mexican Chicken Casserole Recipe

Last month I shared with you my Italian Chicken Casserole  - a recipe I concocted as part of the #CountryCrockCasserole Club that turned out amazing.  We have since eaten it twice - every time wishing I had made a double portion for more left overs.  This month I was challenged again to make another Country Crock Casserole using a few items in my Casserole Kit  plus "items you have on hand." The Casserole Kit included a recipe for Mexican Beef and Corn Casserole but there was a problem... I only had chicken.  SO - I got creative again - throwing random stuff in from my pantry - and ended up with another amazing casserole!  Even though it isnt the PRETTIEST casserole I have ever made, it sure is one of the tastiest.
