The Keto Egg Loaf is a perfect low carb breakfast with also perfect macros. I used my Egg Loaf Recipe for the base of these delicious little breakfast bites and it worked out perfectly.

These Keto French Toast Bites bring together the sweetness of the Egg Loaf and the savoriness of the bacon for the perfect bite every time. Top with fresh blueberries for an added treat.

I used a Mini Brownie Pan from Pampered Chef to make these, but any small muffin tin will work. Remember that the Egg Loaf expands really high while it cooks, and then settles back to normal as it cools.

These Bite Sized Breakfast treats are great for holiday parties, office parties, and other social events where you want to have a keto friendly finger food that everyone will love.

What is the best Keto Sweetener to use for Keto French Toast Bites?

Finding your favorite keto sweetener is a personal preference, but my favorite is Lakanto Monk Fruit Granulated. You can also use Swerve Granulated or Pyure but some experience a minty after taste.

Can I make Keto French Toast Bites ahead of time?

Absolutely! You can make the french toast portion ahead of time and easily reheat by covering bites with a damp paper towel and microwaving in 20-second increments until the desired temperature. It is best to assemble the bites right before eating.

Keto Fried Pickles Recipe

By Leave a Comment

This Keto Fried Pickles Recipe is so easy - and you will never miss the carbs! Crispy fried pickles are the ultimate keto appetizer or on the go snack!

close up keto fried pickle

Fried pickles have been my family's go-to appetizer at just about every restaurant we have ever been to. It is the one snack we can all agree on.

This recipe uses dill pickles, but you can use sweet pickles, bread and butter pickles, or even dill pickle spears to change it up. To make them a bit spicy, add a teaspoon of cayenne pepper or cajun seasoning to your almond flour mixture. To save on carbs, use a mixture of ⅛ cup almond flour and ⅛ cup parmesan cheese. You can also use ground pork rinds to get even lower in carbs.

When I decided to do one year of keto, I knew I had to get to work recreating all of the "normal" foods to keep me on track. Keto Fried Pickles was one I knew the family would love.

The key to a good fried pickle is getting the batter to stick and keep it crunchy while keeping the pickle inside soft.

Almond flour makes the perfect batter - and my favorite Oh Nuts Blanched Almond Flour is perfect to keep low-carb fried pickles crunchy.

I used avocado oil to make these keto deep-fried pickles and they turned out perfectly. Avocado oil is a keto-friendly oil that is unrefined like extra virgin olive oil, but with a higher smoking point, so it can be used to cook at higher heat.

To save on calories you can also cook these breaded pickles in an air fryer. Cook keto air fryer pickles at 375* for four minutes, shake the basket or flip the pickles over, and cook for another 4 minutes or until desired crispiness.

It only takes a few minutes to perfectly fry these low-carb keto pickle chips in avocado oil.

Keto Pickle Chips can be saved in the refrigerator for a few days, however, you will want to crisp them back up in the toaster or a few minutes in the air fryer.

I plugged this recipe into my favorite Keto Calculator App - Carb Manager - and it came up with the following macros:

MACROS

Each serving has 2 net carbs, 3 total carbs, 1 g fiber, 3 g fat, 2 g protein, and 38 calories!

Note: With any Keto Recipe you want to make sure you scan and calculate your specific ingredients as exact macros many vary depending on brands!

Mexican Street Corn Jalapeno Poppers

By Leave a Comment

Mexican Street Corn Jalapeno Poppers are a delicious low carb snack or appetizer that everyone loves! All the flavors you love in a bite-sized snack!

four mexican street corn jalapeno poppers on a white tray with colorful napkin

Now my Chicken Stuffed Jalapeno Poppers have been a crowd favorite for a long time, but I wanted to make something different.

Inspired by SaltySideDish Grilled Mexican Street Corn an idea was born...

womans hand holding jalapeno popper

Now corn is traditionally a no-no on a low carb diet, but did you know that canned baby corn has less than 3 net carbs per serving and only 15 calories?

Baby corn is a low carb corn alternative that tastes like the real thing but without the carbs. You can make this recipe for Mexican Street Corn Stuffed Jalapeños using canned sweet corn or keep it lower carb with canned baby corn.

These unique Jalapeno Poppers were a crowd favorite - even from friends who were not doing low carb. It has all of the flavors of Mexican Street Corn with just a kick of spice and of course, everything is better with bacon.

For this recipe, I used Trader Joe's Everything But The Elote Seasoning, but if you do not have a Trader Joe's close or you want to make a "cleaner" version, you can mix together:

  • 1 teaspoon of chili powder
  • ½ teaspoon cumin
  • ¼ teaspoon cayenne
  • ¼ teaspoon garlic powder
  • ¼ onion powder
  • ¼ teaspoon dried cilantro
  • ¼ teaspoon salt

To make a larger amount, you can also cut up your jalapenos and bake them right in the baby corn recipe to make a delicious, creamy dip.

The only change you need to make is cutting the baby corn into much tinier pieces so it can easily be scooped up on your favorite low carb veggie or chip.

Air Fryer Chicken Nuggets Recipe

By Leave a Comment

Air Fryer Chicken Nuggets are a simple and delicious recipe kids of all ages will love. Full of flavor without any additives or preservatives, you will never want premade chicken nuggets again!

air fryer chicken nuggets

You may think it is crazy to make your own homemade chicken nuggets, but since I have begun really paying attention to ingredients I have seen how even the simplest of foods are choc-full of chemicals.

I decided to make these Keto Friendly Air Fryer Chicken Nuggets and had to fight off the family just so that I could get them photographed! They are SO TASTY.

womans hand dipping chicken nugget in ranch dressing

There are a few things to know about this recipe. One is that if you use ground chicken breast, you need to be careful not to cook too long or it will dry out.

If you want to use chicken breasts, I suggest adding a half tablespoon of mayo to the mixture.

stack of crispy chicken nuggets

I also used Porking Good crushed pork rinds for the breading. You can order them here or you can simply grind up your own pork rinds using a food processor.

The spices I added have just a little bit of heat. If you want to crank it up a notch, my Spicy Chicken Nuggets Recipe has quite a kick.

The Air Fryer cooks these perfectly - keeping the chicken juicy while getting the breading good and crispy.

To reheat, put back into air fryer for 2-3 minutes, or wrap in a damp paper towel and microwave 30 seconds. Let sit for a minute before eating.

These Air Fryer Chicken Nuggets are also perfect to cut up and toss into a big salad. Top with my Keto Ranch Dressing for a macro-perfect meal in less than 20 minutes.

Simple Keto Snack - Pizza Chips

By 39 Comments

These Keto Pizza Chips are a delicious go-to keto snack that is super easy to make and will be loved by everyone!

close up pizza chips in a white bowl

One thing I have noticed since starting the Keto Lifestyle is that my appetite has decreased significantly.

Once I got over the initial hump of my body lying to me and trying to tell me I was starving to death (when really I was just starving it of unnecessary carbs) I very seldom feel hungry the way I used to.

womans hand holding pizza chip over other chips in a white bowl with a bowl of pizza sauce

However, sometimes I do find that I want a snack during the day, so I make sure I keep a few ingredients on hand for Keto Snacks should the craving hit. These Keto Pizza Chips have become pretty much a staple.

Related Article: Keto Two Ingredient Cheese Chips

Delicious low carb snacks can be a little tricky to navigate.  While there are tons of great grab and go choices like almonds olives, and pickles to choose from, sometimes you just want something a little more substantial to snack on.

womans hand dipping pizza chip in pizza sauce

These Pizza Chips deliver some crunch, some salty, and a whole lot of flavor to help your cravings.

They are made from simple ingredients that you probably have in your fridge already and they keep well in the fridge for several days of snacking.

They are also an ideal low carb snack to add to kids lunchboxes or for an afternoon snack that won’t have them crashing and burning by 6pm like a lot of unhealthy snacks do.

bowl of pizza chips

You can add in your favorite toppings too! I tried these with tiny little bits of green bell pepper and it was just like I was eating real pizza! So delicious! My girls love them with black olives.

I have to admit the hardest part about these is finding a stopping place... I can easily polish them off no matter how many I make.

I dip them in my Whole30 Ranch Dressing which is also super low carb and voila! A perfect satisfying snack in minutes.

For best results, I suggest using a silicone muffin tray for perfectly cooked pizza chips every time.

A silicone tray is much easier to remove the finished chips than a standard muffin tin. These are so easy we make them ALL the time.

Cheese balls with keto sausages are popular with online casino players. After all, made without the use of nut flour or a carburetor, the keto cheese sausage balls are low in carbs and full of flavor and are perfect for playing mobile casinos for Kiwis. Here you can find the complete recipe for Keto Sausage Cheese Balls, which are perfect for playing in the casino, as well as see close-up photos.

Before I started on the keto diet I was not a huge fan of breakfast food. Even as a little girl I just wasn't a huge fan of the "typical" breakfast... unless it was the tiny little silver dollar pancakes my Dad used to make.

Sirnie balls with keto sausages for breakfast are very popular among online casino players. Sirny Keto Sausage Balls do not contain any nut flour or carb and can be ordered and pay by phone bill online casino south africa in just two clicks. Sausage balls are also low in carbohydrates, which is suitable for online casino players who love sports.

However, since starting keto I have come to love breakfast foods - even at the weirdest time of the day.

womans hand holding sausage ball close up

That is mostly because of my recent obsession - these Keto Sausage Balls. Even better - they only take five ingredients! Can't beat that!

Now, I have seen recipes for these before - but they always used almond flour or coconut flour.

Cheesy keto sausage balls are very popular among online casino players because their taste is very rich. At the same time, cheese keto sausage balls contain very few carbohydrates, only 1 carbohydrate per ball, and you can Get the Latest Odds, Spread, and Picks for the Trail Blazers vs Clippers Game on April 8th at same time you won’t even notice how you eat them all. In addition, cheese keto sausage balls are very easy to prepare, and most importantly, online casino players avoid using nut flour or carburetors when cooking.

Not only do I think those two flours significantly dry out these little bites of heaven but have you looked at the carb count on some of those?! Sheesh. No thanks.

How to Make Them Low Carb

I was determined to come up with a Low Carb Sausage Balls Recipe that was lower in carbs than what I had found... and I am excited to say - I did it!

These little balls are so incredibly easy to make - and have a fraction of the carbs! By using grated parmesan instead of nut flours I have brought the carbs down while taking the flavor way up!

MACROS:

When I scanned everything into CarbManager - my favorite keto diet app - it came up that each one of these delicious little sausage balls has just one net carb!

The entire recipe makes 24 sausage balls, so I just choose how many I want to eat and voila! Counting carbs doesn't get much easier than that!

Not to mention these little guys stay moist when nut flours can easily dry them out. It is a total win-win!

Easy Spinach Bites Appetizer Recipe

By 1 Comment

This Easy Spinach Bites Appetizer is as healthy as it is delicious. Inspired by a casserole recipe, this bite sized hot appetizer recipe will be a crowd favorite.

spinach bites appetizer

A few weeks ago I went over to a friend's house where she made a spinach casserole that I fell in love with... so much so that I went back for a couple of servings.

Inspired by that casserole I wanted to make something a little more bite sized that I could make quickly for a party. That is where these spinach bites were born.

close up of spinach bite

The spinach casserole was quite creamy, so I needed to get creative with the recipe to make sure it kept its shape. The most important thing is to squeeze as much water as you can from the spinach first - that will help each of the little spinach bites keep its shape.

Whether you eat these with your fingers or with little decorative picks, they are a great little hot appetizer that you can enjoy guilt free. They go perfectly with my keto sausage balls.

spinach bites appetizer

Easy Spinach Bites Appetizer

Ingredients:

  • 12 oz frozen chopped spinach, defrosted
  • 1 cup cream of mushroom soup
  • 1 tablespoon minced garlic
  • 4 oz cream cheese
  • 1 ½ cup shredded mozzarella
  • 2 oz crispy fried onions

Spinach Bites Instructions:

Place crispy fried onions in a ziplock bag and crush with a rolling pin.

Squeeze as much water out of the spinach as possible. It is important that these are as "dry" as they can be so they hold their shape.

Mini Corndog Cake Pops

By 19 Comments

These Mini Corn Dog Cake Pops take only four ingredients and four minutes to have the perfect kid-friendly lunch or snack to go!

corn dog cake pops

My girls love corndogs and I am always looking for easy, quick snacks to feed them when they come home from school to tide them over until dinner.

We are not big "snack food" people, so I need REAL food that is easy and small enough to be a "snack."   Well, today I found THE perfect one!  And they are FABULOUS!

This morning while perusing Pinterest I ran across this Pin from MoneySavingMom.com:

My first thought.... I CAN DO THAT IN THE CAKE POP MAKER!!

Jiffy Mix corn bread is a staple for corn dogs - it has just enough sweetness and stays moist.

One of the reason I love these Corn Dog Cake Pops so much for kids is that you can cut the hot dog pieces teen tiny for younger kids or larger for bigger kids.

You can use any brand of hot dog that you want - just make sure you cut your hot dog pieces small enough to be bite size for your little ones.

Paired up with another favorite - Ore Idea Tater Tots - with some Ketchup and a glass of milk, and we have a perfect, nutritious snack in under 10 minutes!

These would also be very easy to make in large batches and freeze in the Zip Lock Snack Size freezer bags for the girls to grab on the go.  Also easy to pack in lunches - there is no mess!

These Rosemary Parmesan Low Carb Crackers are a delicious crunchy keto snack. Perfect for dipping or enjoying all by themselves.

low carb crackers on a white plate with a red napkin

There are plenty of packaged keto crackers on the market now, but they all have a weird after taste to me. I decided to take it on myself of creating crispy low carb crackers on my own.

I wanted to keep it as simple because I knew once I perfected it, I would want to make them aaaaallll the time. And I was right. Thank goodness they are low carb because... well it is hard not to eat them all.

These low carb crackers do need to be kept in an airtight container in the refrigerator to stay fresh.

Low Carb Crackers Recipe

Ingredients:

  • 1 cup shredded mozzarella
  • 1 cup grated parmesan
  • 1 cup blanched almond flour
  • 4 oz cream cheese
  • 1 tablespoon dried rosemary
  • ½ teaspoon pink salt

Instructions:

In a large microwave safe bowl, combine mozzarella, parmesan, cream cheese and almond flour. Heat for 30 second increments, stirring between each until a dough forms.

Let cool before mixing in remaining ingredients. Continue to mix until rosemary is evenly mixed throughout the dough.

Place dough on a parchment lined cookie sheet. Place another sheet of parchment paper on top and roll dough out to approximately ¼ inch thick. The thinner you roll the dough, the crispier your crackers will be.

Using a pastry wheel, cut into 1" squares. Poke a small hole into the center of each with a toothpick.

Place in refrigerator to set for 30 minutes or in freezer for 10 minutes.

Using a spatula, transfer each cracker to a parchment lined cookie sheet and bake for 15 minutes at 450*.

Allow low carb crackers to cool on a wire rack before enjoying.

Low Carb Broccoli Fritters Recipe

By 1 Comment

Low Carb Broccoli Fritters are the perfect keto side dish for every entree. Super easy to make with near-perfect macro break down, these crispy little fritters are a crowd-pleaser.

close up keto broccoli fritters on white plate

Broccoli is my favorite low carb vegetable - in part because of how versatile it is. Plus it is an easy vegetable to get all year long.

For these low carb broccoli fritters you can choose to use fresh broccoli, steam in bag broccoli, or even riced broccoli. I have used all three with great results.

browned broccoli fritters on a white plate

These broccoli fritters are easy to make even with the littlest chefs helping out. Using a cookie scoop helps makes each fritter the same size easily.

I also like to overcook them a bit to help add crispiness to the edges. They reheat perfectly, so they are great for meal prep or just to have a quick low carb snack.

I also bake these low carb broccoli fritters to save on calories. You can also pan fry these in a skillet with a bit of oil

You can also simply swap out riced cauliflower or shredded zucchini in place of broccoli for the perfect little veggie fritter.

Keto Cheez Its Recipe

By 1 Comment

Keto Cheez-Its are the keto snack you have been looking for! Crispy and cheesy with that savory flavor you love. These Keto Cheese Crackers will satisfy your craving for crunch without going over on your macros.

keto cheezits

Before starting the keto lifestyle I used to love cheese crackers. I could sit on the couch and polish off a box in one sitting.

I was missing my beloved Cheez-Its the other day, so I decided to make my own low carb cheese crackers to satisfy my cravings.

low carb cheese crackers

I recently discovered this cheddar cheese powder which has been a fun game changer for all of my cheesy recipes. While you do not HAVE to have it to make these keto cheese crackers, it does really punch up the cheesiness. It does include carbs though, so just be mindful of that when calculating your macros.

I also used sharp cheddar, but you can really make these with any cheese you want. You can also add a bit of cayenne pepper to give them a bit of a kick.

keto cheez its

Since these keto cheezits do not have any preservatives, I do suggest storing them in the fridge. They will lose a bit of their crispness, but you can warm them up in a toaster oven and they crisp back up perfectly.

If you are looking for a cheesy snack that is a little less involved, my keto two-ingredient cheese crisps continue to be one of my top recipes week after week. But these keto cheese crackers are definitely worth the time involved.

keto cheezits

Keto Cheez Its

Ingredients:

  • 1 ½ cup almond flour
  • ½ cup cheddar cheese powder (optional)
  • 2 cups shredded sharp cheddar cheese
  • 3 tablespoon butter, melted
  • 2 large eggs
  • ½ teaspoon pink salt
  • ½ teaspoon baking powder
  • 1 tablespoon coconut flour
  • ¼ teaspoon onion powder
  • ¼ teaspoon paprika

Kitchen tools:

  • Cookie sheet
  • Parchment paper
  • Scalloped pastry wheel
  • Toothpicks

Instructions:

Mix together all ingredients in a large bowl. The mixture will seem dry at first - continue mixing until a dough forms.

Put dough on parchment paper and cover with another piece of parchment paper. Using a rolling pin, roll dough to approximately ¼ inch thick.

Cut dough into squares using the pastry wheel and poke holes in the center of each square with the toothpick.

Place in freezer for 30 minutes to let set.

Remove from the freezer and move each cracker to a parchment lined cookie sheet giving about ½ inch between.

If you find the crackers difficult to remove from the parchment, place them back in the freezer for an additional 15-20 minutes. Crackers should easily lift and keep their form on the cookie sheet.

Bake at 350* for 12-14 minutes or until edges start to brown. Let cool completely for the ultimate crispiness.

To give even more crisp, you can bake for an additional 5-7 minutes at 350*.

Enjoy alone or with your favorite keto-friendly dips like this Cucumber Dip!

Keto Pigs In A Blanket

By 7 Comments

These Keto Pigs in a Blanket are one of the best keto snacks around. This is one of my favorite keto appetizers to take to a party that even your non-keto friends will love!

keto pigs in a blanket

With the Big Game coming up I wanted to make some Keto Appetizers to nosh on while we watch so I would mot be tempted by all of the other foods friends will be bringing.

My Keto Sausage Balls were a must - but I wanted to have a variety, so I set out to make a few new keto snacks. Low Carb Pigs in a Blanket were a no brainer - I am pretty sure I ate roughly eleven million of the "normal" ones in years past.

closeup keto pigs in a blanket

Keto Pigs in a Blanket are also a great keto recipe for kids - they are fun to dip in your favorite sugar-free ketchup for an after school snack! This recipe makes a bunch - so I divided them up in baggies for an easy grab and go snack.

In fact you may have seen on Instagram that I took a baggie with me to the Saints game... what is better than keto road trip snacks?!

I made these Keto Pigs in a Blanket with the Hillshire Farms Little Smokies - which do have a bit of Corn Syrup in them - making them a bit of a "dirty keto" snack.

However, a serving of them only has 2 carbs, so even after you add in the "blanket" they are still much lower in carbs than many other keto snacks out there. Just be aware - they are not the cleanest ingredients.

Closeup inside keto pigs in a blanket appetizer

Also this recipe made about 45 Keto Pigs in a Blanket - which is about 2 packages of the Little Smokies. I wanted a bunch to have leftovers and to share - but you can half the recipe easily if you only want to use one package.

They can also be made ahead of time and frozen until you are ready to enjoy them. Just wrap in a damp paper towel to warm them up.

Ingredients:

  • 1 package cream cheese, softened and cubed
  • 2 cups shredded mozzarella
  • 2 eggs
  • 2 cups almond flour
  • 2 packages Hillshire Farms Little Smokies

Keto Pigs in a Blanket Instructions:

In a large bowl combine cream cheese and mozzarella, microwaving in increments of 30 seconds until well combined.

Add in almond flour while the mixture is still warm and mix well.

Add in eggs and mix until a dough forms - adding more almond flour if needed. (may vary depending on the size of eggs)

Pour dough ontop parchment paper and cover with a second piece of parchment paper. Roll out to approximately ¼ inch thick.

Refrigerate dough for about 30 minutes or freeze for 10. Remove and slice into thin strips.

Wrap each strip around a sausage to make keto pigs in a blanket and place on a parchment paper-lined cookie sheet at least ½ inch apart.

Spicy Stuffed Jalapeño Popper Mummies

By Leave a Comment

These Spicy Stuffed Jalapeño Popper Mummies are the perfect Keto Halloween Party Food that everyone will love!

close up of jalapeno popper mummies with halloween decorations

Jalapeno Poppers are pretty much a keto party staple. We love Chicken Stuffed Jalapeno Poppers, Jalapeno Popper Dip, and even my Mexican Street Corn Stuffed Jalapeno Poppers have been a hit.

So with Halloween just around the corner I thought it would be fun to make some spicy bacon wrapped jalapeno popper...mummies.

single jalapeno popper mummy on a white plate

One tool I recommend for making any Jalapeño Poppers is a serrated grapefruit spoon to easily get the seeds and ribbing out. I gabbed some of these and it was a total game changer for getting the jalapeños cleaned out easily.

Also using precooked bacon helps to keep the bacon crispy. I love the Hormel Black Label that I get from our local Sam's Club.

Now, the "eyes" are not Keto - but honestly you do not want to eat them with these spicy jalapeno poppers anyway! They are just to look cute!

Without the eyes, two Jalapeño Popper Mummies has just three net carbs! That is a low carb appetizer you can enjoy with no guilt!

Keto Beef Empanadas

Ingredients:

  • 1 Egg whole
  • 1 teaspoon Apple cider vinegar
  • 2 oz. Cream cheese
  • 1 c Almond flour
  • 2 tablespoon Coconut flour
  • 1 tablespoon Psyllium husk powder
  • ½ teaspoon Xanthan gum
  • 2 teaspoon Baking powder
  • Pinch of salt
  • ½ teaspoon Onion powder
  • 1 teaspoon Garlic powder
  • Parchment paper
  • ½ lb Ground beef
  • ½ c Onions chopped
  • Salt and pepper to taste
  • 1 teaspoon Sazon seasoning
  • ¼ c Queso fresco crumbled
  • 1 Egg beaten

Instructions:

Brown the ground beef in a skillet over medium-high heat. When almost cooked through, add in salt and pepper to taste, the sazon seasoning and the chopped onions. Stir to combine, and continue to cook for an additional 5 minutes.

Preheat the oven to 400 degrees.

In a mixing bowl, combine the egg, apple cider vinegar, cream cheese, almond flour, coconut flour, psyllium husk powder, xanthan gum, baking powder, pinch of salt, garlic powder and onion powder. Beat on high until a thick dough forms, and the ingredients are well combined.

Place the ball of dough in the center of a piece of parchment paper. Place another piece of parchment paper on top of the dough, and roll it out into a thin layer. You do not want the dough to be too thick, but try not to roll it so thin that it tears easily when you work with it.

Use a jar, cup or cookie cutter to cut out circles that are several inches across from the dough. Keep rolling out the dough and cutting new circle shapes until all of the dough has been used.

Place a tablespoon of meat filling in the center of each dough circle, and sprinkle with some queso fresco crumbles.

Place your finger in the beaten egg, and run it along the bottom rim of the dough circle.

Fold the top half of the circle over onto the bottom half with the filling securely in the middle. Pinch the edges of the dough circle closed so that it forms a half circle empanada.

Repeat steps 6-8 until all circles have been filled. You should have enough dough to make 10 small empanadas.

Place the filled empanadas on a parchment lined baking sheet, and brush with the egg wash.

Bake for 12-15 minutes until golden brown and cooked through.

By 11 Comments

This is the easiest Keto Appetizer - Bacon, Egg, and Cheese Sliders are the perfect low carb appetizer to please any crowd!

This recipe is great as a keto appetizer, snack, or even as bacon, egg, and cheese breakfast sliders for busy mornings on the go! Boiled eggs make the perfect slider buns that you can fill with whatever you want.

keto egg sliders

These little guys make such a great easy keto appetizer that everyone loves - whether keto or not! I mixed up homemade guacamole, but really you can use a premade guacamole if you are in a rush!

If you have watched my Instagram Stories you know I am obsessed with my automatic egg cooker! I started with this one but recently upgraded to this one. They are both perfect for making this keto appetizer - fast!

Another tip is to use the precooked bacon - I find it stays crispy longer and of course makes prepping this keto appetizer even faster!

Keto Spicy Chicken Nuggets

These Keto Spicy Chicken Nuggets will cure your craving for fast food! Whether you enjoy spicy chicken nuggets for a snack, appetizer or even as your keto main course, these little bites are loved by everyone!

keto spicy chicken nuggets

The hardest part about this low carb spicy chicken nuggets recipe is not eating the entire batch every time you make them!

They have just enough spice to give you a little kick, but are not too spicy so that they are still a kid friendly keto recipe!

I love these spicy chicken nuggets dipped in my Whole30 / Keto Ranch Dressing!

Keto Spicy Chicken Nuggets

Ingredients:

  • 2 lb. Boneless skinless chicken tenderloin strips
  • 2 Eggs, beaten
  • 1 c. Crushed pork rind crumbs
  • 1 teaspoon Oregano
  • 1 teaspoon Onion powder
  • 1 teaspoon Garlic powder
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • ½ teaspoon Paprika
  • Pinch of red pepper flakes (optional)
  • Salt and pepper to taste
  • Oil for frying (I use avocado oil) or an air fryer to use instead if desired

How To Make Spicy Chicken Nuggets

Begin by placing your oil into a deep skillet or pot, and heating it over medium high heat on the stovetop. If you are using an air fryer instead, begin to get it preheated if needed.

Cut the chicken tenderloin strips into bite sized “popcorn” pieces.

In a shallow bowl, place the two beaten eggs plus salt and pepper to taste.

In a separate shallow bowl, combine the crushed pork rind crumbs, oregano, garlic powder, onion powder, chili powder, cumin and paprika. Mix to combine all of the ingredients together well.

Dredge the chicken nugget pieces in first the egg mixture, and then coat them in the pork rind crumb mixture. Place them onto a plate until you have finished coating all of the chicken pieces.

Place the chicken pieces into the heated oil with tongs. Cook for 5-6 minutes until browned on the outside and fully cooked on the inside. Be careful not to heat your oil on high heat. If your oil is smoking, the outside of your spicy chicken nuggets will burn before the inside is fully cooked.

Serve with your favorite keto approved dipping sauces.

25 Best Keto Diet Snacks You Will Love!

By Leave a Comment

If you are following a ketogenic diet plan, then this list of 25 Keto Diet Snacks for Your Pantry is perfect for your needs.

Starting a keto diet can be tough for those who like to pick up snacks all the time, but the thing is, there is so much delicious food out there that is keto compliant and just waiting for you to grab as a snack.

25 Keto Diet Snacks

The basic rules of the ketogenic diet are to limit your carbohydrate intake to under 20 grams per day.

This includes fruits and vegetables, so you really have to think and plan ahead if you want to stay on track.

While you may be eating larger portions during your meal times, there are days and times when a snack is a must.

Packing something in your purse, diaper bag, backpack, or even having a basket in the trunk of the car is a great way to help you achieve your goals.

Below are some of our favorite keto diet snacks that are ideal to keep on hand.

Refrigerated Keto Diet Snacks

There are always going to be a few things to snack on in your refrigerator. These items are our favorites that are also keto diet snacks and take little to no preparation necessary.

  • Cheese: Higher fat harder cheeses are typically suggested, but you can add any cheese to this list that you prefer. I typically grab cheddar, string cheese, goat cheese, cream cheese, and pepper jack cheese. Always check flavored cheeses and cheese spreads for added sugar or flour.
  • Eggs: Buy these by the dozens as they are ideal for breakfast, meal times, and ultimately snacking. We have a great Guacamole Deviled Eggs Recipe to keep ready and on hand for easy snacking.
  • Pickles: There is nothing as satisfying as biting into a salty and crunchy pickle. Whatever brand you want works, but we love Vlassic Dill Spears and Bubbie's Fermented Pickles.
  • Luncheon Meats: While most lunchmeat will be fine, you do want to make sure to not buy any with added sugar. Read labels and watch for uncured options when possible. Turkey, ham, chicken, roast beef, and some salami or pepperoni are all excellent options.
  • Whole Milk Greek Yogurt: Whole milk yogurt is the lower carb option and isn't something to eat a lot of, but can be a great option to have on hand to mix with some berries and a bit of your favorite sugar-substitute like Swerve.
  • Whipped Cream: Not whipped topping, but real actual whipped heavy cream. This is great for a semi-sweet treat by itself but is also perfect with a strawberry for a fast treat that feels decadent.
  • Berries: Berries are the only fruit that most will eat on a ketogenic diet as they are the lowest in carbohydrates. So, keeping some blueberries, raspberries, or strawberries on hand at all times is a must.
  • Avocado: Whether you mix it up with some lime juice, cumin, and diced onion to create a guacamole, or just slice and eat alone, avocado is that healthy fat everyone loves.
  • Olives: Olives are kept both in and out of the refrigerator depending on the type. Black olives, kalamata olives, and green olives are all favorites for snacks or to add to salads and side dishes.
  • Halo Top Ice Cream: This is a bit of a controversial topic as some like this and others don't, but for lower net carb counts, it is a great ice cream treat.
  • Keto Peanut Butter Cookies: This is our favorite keto peanut butter cookies recipe. You can easily make big batches of these and freeze them so you can pull just 2-3 out at a time to thaw and eat.

Shelf-Stable Keto Diet Snacks

Inside your pantry, these shelf-stable items will last longer and are a better choice for days when a fast snack is needed.

There are classic items as well as some of our favorite options from the newer ketogenic products available.

  • Beef Jerky: You can grab any brand, but we really love the Krave brand and flavors offered that don't have any added sugar.
  • Pork Rinds: Pick up these at a convenience store or grocery store anywhere, but if you want specialty types we love Epic Artisan Pork Rinds for an upscale treat.
  • Nuts and Seeds: Pistachios, cashews, almonds, macadamia nuts, sunflower seeds, and pumpkin seeds are my favorites but you can mix and match whatever you prefer. The calories on these add up fast, so remember to snack smart and not eat too many at once.
  • Nut Butter: Unsweetened peanut butter is probably the most commonly used, but you can also check out almond butter, cashew butter, and sunflower butter. Just watch for added sugar on the labels. Legendary Foods Keto Nut Butter is a favorite.
  • Seaweed Snacks: Crunchy and salty, seaweed snacks are a great option for that need to snack on "chips". Jayone Salted and Roasted Seaweed is a great choice.
  • Kale Chips: Rhythm Superfoods Kale Chips come in multiple flavors and are excellent quality.
  • Cheese "Crackers": Whisps are a popular brand of cheese crackers. You might also enjoy Just the Cheese bars.
  • Protein Shakes: Premier ProteinThere are literally hundreds of brands available that are both high protein and low carbohydrate so good for the ketogenic diet. One of our favorite keto diet snacks is a shake. They are keto friendly and come in multiple flavors.
  • Tuna or Chicken Pouches: The plain pouches are great with a bit of mustard and seasonings.
  • Sugar-Free Dark Chocolate: ChocoRite Dark Chocolate bars are always a hit.
  • Sugar-Free Jello: Yes, basic Jello gelatin is a great option when you choose sugar-free.
  • Quest Protein Bars and Cookies: There are multiple flavors at varying carbohydrate amounts so check for your favorites in Quest Protein Cookies.
  • Primal Thin Crackers: Low carb crackers are a must have snack food and Primal Thin Crackers are delicious.
  • Fat Snax Cookies: I've only tried one flavor of these but they are pretty decent and a good convenience keto diet snack option.

More Keto Diet Snacks:

Eggland's Best Simple Guacamole Deviled Eggs

By 1 Comment

Eggland’s Best sponsored this post. All thoughts and reviews are my own.

Did you know that the average family only spends 12 minutes together at the table during meal time? Twelve minutes!! That is less than 1% of your day!

Research has shown that family meals can greatly benefit the health and wellbeing of our children, so Eggland’s Best (EB) and the American Heart Association have teamed up to help educate families on the importance of spending more time together and eating healthy and nutritious meals.

Recently I had a chance to team up with Eggland's Best to participate in the Family Meals Pledge in honor of National Family Meals Month™ in September. The Family Meals Pledge is challenging families around the country to spend an "eggstra" DOZEN minutes - see what I did there!?! - together as a family.

Eggland's Best has amazing heart-healthy recipes on their site like the Southwestern Quinoa and Egg Breakfast Bowl and Cheese and Vegetable Frittata with Fruit Salad but the one that really caught my eye brought together my two favorite things - Guacamole Deviled Eggs.

Deviled eggs have always been one of my favorite snacks - whether I am at home or heading to a party. They are simple, delicious, and a bonus - they are keto!

They are also the perfect appetizer to enjoy - and keep your family around the table just a while longer. I made these for our Weekly Family Dinner Night - they were a huge hit!

Eggland’s Best (EB) isn't just the best-tasting eggs - they are also the healthiest eggs! The #1 branded egg in the U.S. and an excellent source of vitamins D, B12, E, B5, and riboflavin. They have six times more vitamin D, more than double the Omega-3s, 10 times more vitamin E and 25% less saturated fat than ordinary eggs.

Independent testing has also confirmed that Eggland’s Best eggs stay fresher longer than ordinary eggs - not that we ever have a problem with them being in the fridge too long! Not in this keto house!

I will admit - I can eat guacamole with a fork. And I do - almost daily. But I had never made Guacamole Deviled Eggs... I may not be able to go back to normal deviled eggs after this!

You can take the Family Meals Pledge and be entered to win $5,000 towards a family vacation or a variety of other instant win prizes like gift cards, cookware and more!

Visit EBFamilyMealsPledge.com to make your pledge and see if you are an instant winner! Then, spend more time with your loved ones enjoying delicious heart-healthy foods like these Eggland's Best Guacamole Deviled Eggs!

Also be sure to follow Eggland's Best on Facebook, Twitter, Pinterest and Instagram for more delicious recipe ideas as well as the American Heart Association on Facebook and Twitter for more ways to feel your absolute best!
