Keto Peanut Butter Cookies

If there is anything better than just a spoonful of peanut butter - it is a peanut butter cookie - which is why these keto peanut butter cookies have gotten a permanent place in my heart - and my weekly meal prep!

These low carb cookies can be made with any low carb sweetener you choose.

I have used everything from monk fruit to Swerve and they all taste great to me. You can even use a powdered sweetener for an even smoother cookie. So delish!

These keto cookies are flourless too - so they are also gluten-free! You can even make them with different nut butters to your liking.

My all-time favorite nut butter next to peanut butter is cashew butter... and trust me when I say keto cashew cookies dunked in cashew milk are highly addicting.

Keto Peanut Butter Cookie Ingredients

I have the full recipe in a printable card for your convenience at the bottom of this post. The ingredients you need are:

  • Natural creamy peanut butter - look for the ingredients to be only peanuts and salt
  • keto sweetener of choice - I prefer golden monk fruit
  • egg

The peanut butter you use will greatly vary how the cookies hold together and how they taste. While this may sound silly, you want to first make sure you actually like the taste of the peanut butter before you use it in this recipe.

Many natural peanut butter can be very bitter and may have a different texture than your standard favorite. I have made this recipe dozens of times with all different brands of peanut butter, and each time they taste just a bit different.

Another important tip is to make sure you let the cookies cool completely before eating. Right out of the oven the cookies are quite crumbly.

If you want softer, chewy cookies, do not press them too thin.

How To Make Peanut Butter Cookies

Start by mixing up the ingredients until well combined in a large bowl.

You can do this by hand - you do not need a mixer like you do for my Chocolate Chip Keto Cookies.

Then using a spoon, scoop out a bit of the mixture and roll into about a 1" ball using your hands.

You can use a bit of oil to make sure it does not stick to your hands.

Place each little ball on a parchment paper lined cookie sheet at least 2" apart.

Then, using a fork, gently press down in the center of each cookie from two different directions to make a criss cross pattern.

Be careful not to make the cookie too thin.

Bake cookies for about 12 minutes and let cool at least 5 minutes before serving.

When you are doing the ketogenic diet you want to make sure that you use an app like MyFitnessPal or Carb Manager to scan every ingredient and make sure you are staying within your macros.

Depending on the brand ingredients you use, the carb count especially may vary.

For this recipe, I used this peanut butter and Stevia in the Raw - which brings each cookie to 134 calories, 2 net carbs, 6g protein and 11g fat.

Total Time: 17 minutes

Delicious and simple Keto Peanut Butter Cookies you will love! Perfect for your weekly meal prep to include a little bite of something sweet!

Ingredients

  • 1 Cup Natural Peanut Butter
  • ½ Cup of granulated sweetener
  • 1 Egg

Instructions

  1. Preheat your oven to 350 degrees.
  2. In a bowl, mix all ingredients together until well combined. Consistency will change to a thick dough.
  3. Using a small spoon, scoop enough dough to roll a 1 inch ball in your hands.
  4. Place balls of dough on a parchment lined cookie sheet. Press each ball down with a fork, twice, creating a criss cross pattern on each cookie.
  5. Bake for about 12 min or until cookies are cooked through - they will feel soft to the touch.
  6. Let cool for completely before serving. Store in air tight container in the refrigerator.

Notes

Cookies are best when given a few minutes to cool. Different peanut butter brands will change the consistency and taste of the cookies. I have found Smuckers Natural Creamy Peanut Butter to be one of the best for solid cookies with low carbs. For chewier cookies, do not press too thin before baking. Keep refrigerated to keep fresh after baking.

    MyFitnessPal doesn’t count net carbs. I should know this since I tried desperately to use their app, trying to figure out how I can get it to do it, only to find that it can’t. From their own mouths. This isn’t the only Keto sight that has been suggesting this app and it’s frustrating. Don’t suggest an app that doesn’t have the capabilities to count net carbs for a Keto diet!

      Hi Laura, I am sorry, I have just always done the calculations since it is just subtraction - but a reader recommended CarbManager as an app to use and I have begun using that one. It seems to do much better with carbs/net carbs.

      FYI there’s a website that helps you set up mfp for keto (including showing net carbs). I think it is caveman keto or something like that. I set mine up and love it.

      My fitness pal shows everything you need to figure out your net carbs. Simply subtract! I have been on keto for a year and faithfully use MFP.

      This is a wonderful recipe, one that I have used many time. Sometimes I mix my nut butters, anyway you do it, its delicious!

      I use My Fitness Pal. It’s frustrating that it doesn’t count Net Carbs, but I like that it tracks all other macros. I just deduct the grams of fiber from the grams of carbs.

      There is a GREAT app I use called Carb Manager. It let's you track your food by meals and snacks and shows you your macros and daily amounts so you can know what you have eaten and how much you have left to stay within your percentages daily on KETO> I love it.

      I have been using My Fitness Pal to track my net carbs for some time and if you did some research before making and comments it is a SIMPLE calculation of subtracting your fiber from your total carbs. Not difficult at all. Like I said spend more time learning than snide remarking! Thanks for the recipe Moscatomom!!!

    Hi Lindsey,
    Just wanted to let you know that I got this recipe from my husbands grandmother back in 1984. The first thing she asked me when we met was my recipe for peanut butter cookies. I of course gave her the long detailed one that includes both brown and white sugar and so on. We have used this recipe every since. The only difference is I like to roll mine in sugar before baking, makes them crunchy.

    I like crunchy peanut butter cookies so I open the oven and give it 10 minutes then put the cookies back in for a few hours to crisp them up. Delicious!

    My son is on the keto diet, but missed his peanut butter/chocolate combination in Reese's. So I doubled your recipe, and added low carb chocolate chips. You have to flatten the cookies with your fingers, but the come out so good. My son gets his chocolate peanut butter fix. Thanks

    Made these using home made peanut butter(just put 2 cups roasted peanuts in food processor for 1 cup peanut butter) and swerve.... Very good... I had to bake them longer... More like 15 min... Thanks for the recipe!

    Hi, This recipe is very easy. I made the today. They came out a bit crumbly though. I also found them to be a bit on the sweet side with the sweeter. I made a double batch so will try tweeking it a bit next time.

    I have been on the keto diet for only 4 days now and really craving sweets. These satisfied my sweet tooth with the little ingredients I have in my kitchen. I made these with almond butter by accident but they turned out great! Baked for 10 minutes and they melt in your mouth! Super easy 3 ingredient delicious cookies and I didn't break my diet!

    Thank you so much for the recipe. I doubled the batch & used Swerve Granular as my sweetener of choice. My cookies took a while longer but that could be just my elevation brought into factor & my preferred level of crunchiness. I think I will try less sweetener or a different type next time as I found the cool flavour a bit strong with the Swerve. I will also add some salt as I miss the saltiness of regular peanut butter. Overall, very good! Thanks again & keep up the good work! ?

    Made these last night and really loved them! So many keto desserts call for almond flour but my fiancé is allergic! (Idk why he can eat peanut butter- he’s a mystery!) These were so easy and quick to make, and he loved them! Thank you so much!
