Monday night while getting ready for the Toddler’s Birthday I asked her what she wanted to have for dinner on her big night. I told her she could have anything she wanted (while silently calculating what a Hibachi dinner would cost for six people) and held my breath. She thought for a moment and then said:
“Will you make me your famous spinach lasagna?”
As my heart filled with pride, I silently celebrated this little victory, and headed to Publix for all of the fixins for dinner.
Since I knew not everyone is as big of a fan of my Turkey and Spinach Lasagna, I decided to also make a “normal” lasagna with red sauce and ricotta cheese. Making one lasagna is quite an undertaking… but two and you may as well clear the whole kitchen.
I have never found “oven ready” noodles that were any good, so my first task was cooking two full boxes of lasagna noodles… and then finding a place to lay out all of the cooked noodles…
Then on to cooking the meat… one with ground turkey, and one with ground chuck. Then I started mixing ingredients and layering everything together. In less than 2 hours I had gone to the store, gotten everything I needed, gotten home and cooked and assembled two complete lasagnas. I have to say, I was pretty impressed with myself.
Almost Famous Turkey and Spinach Lasagna
- 1 pound ground turkey
- 1 can Campbell’s Cheddar Cheese Soup
- 1 teaspoon Garlic Salt
- 1 cup milk
- 2 cups shredded sharp cheddar
- 2 cups shredded mozzarella cheese
- 1 pkg chopped spinach
- 1 egg
- lasagna noodles
Cook turkey completely and drain. Mix in soup, garlic salt, and milk until well blended. Set aside. Thaw spinach under warm water and squeeze ALL excess water. Mix cheeses and egg. Pull spinach apart in pieces and mix into cheeses. Layer noodles, meat and cheese mixture. Make sure to end with a cheese layer on top! 😉 Bake 45 minutes uncovered at 350*.
- 1 pound ground chuck
- 1 can Traditional Spaghetti Sauce
- 1 tsp Garlic Salt
- 1 large package Ricotta cheese
- 3 cups shredded mozzarella cheese
- 1 can mushroom stems and pieces
- 1 egg
- 1/2 cup milk
Cook ground meat completely and drain. Mix in spaghetti sauce and garlic salt until well blended. Set aside. Mix cheeses, milk and egg. Layer noodles, meat and cheese mixture. Make sure to end with a cheese layer on top! 😉 Bake 45 minutes uncovered at 350*.
