If you have ever had good risotto, it is easy to understand why Gordon Ramsay, World Renowned Chef and creator of Hell's Kitchen, insists on keeping the dish on the menu at his restaurant.  It is amazing.  BUT - week after week you watch amazing chefs with unimaginable palettes who can cook things I cant even pronounce, stumble on making the infamous mushroom risotto.

Bottom line - this is no easy dish to make.

Last year when I reviewed the new Bertolli Meal Soups I was super impressed with how much flavor they packed into... well... a FROZEN MEAL.  Gone are the days of "tv dinners" that were really just sauce covered cardboard.  So when I was asked to review Bertolli's newest meals - Bertolli Classic Risottos - I was skeptical ....but excited.  No where within driving distance of Pensacola even SERVES Risotto...

Bertolli continues to bring authentic Italian dining to your home with fresh-tasting, premium ingredients.  Available in two rich flavors, Roasted Chicken & Mushroom and Garlic Shrimp, our new risottos are made with Italian rice, parmesan cheese, crisp vegetables and high-quality proteins.  And the best part? No fancy kitchen tools are needed to prepare this delicious dish because Bertolli takes the guesswork and labor out of preparing risotto from scratch! No more waiting at the stove, constantly stirring, and timing it just right. As any Italian cook knows, risotto is perfect the second it's done and our new Bertolli Classic Risottos are stored at the peak of this perfection.

The Bertolli Classic Risottos arrived on Bunco night which was perfect.  Since I was feeling a bit under the weather I cooked up the Roasted Chicken Risotto and took it next door to share.  Everyone LOVED it.  And I loved joking about how I "just slaved over it" stirring and stirring.... when of course the truth was it practically cooked itself - all I did was stick it in a pan on medium heat and stirred occasionally.

The Roasted Chicken Risotto with mushrooms, zucchini and asparagus was our favorite but they do also have a Garlic Shrimp Risotto which has zucchini, yellow squash and red peppers.   Both are a breeze to cook - taking about 12-15 minutes each just to warm up good, and paired with a salad and breadsticks make a perfect meal in less than 20 minutes.  On the bag it says "Meal for Two" - but it makes a lot of food.  So for us it would be "Meal For Two Plus Lunch The Next Day."

The Roasted Chicken Risotto will now be a staple in the Moscato Household.  I love that I can get my "risotto fix" after watching a night of Hell's Kitchen. Step aside Ramsay... I got this!

You can find Bertolli Classic Risottos in your grocers freezer section, and also check out their two new flavors of Meal Soups - Italian-Style Wedding and Ricotta & Lobster Ravioli in a Seafood Bisque.

Disclaimer:  I received each of the new flavors of frozen meals from Bertolli for the purpose of this review.  All opinions and thoughts are 100% my own.
