We are in our second week of summer here on the Gulf Coast and so far it has rained every… single… day. Now granted, we are used to afternoon thunderstorms, but this has been over the top. I think we are all suffering from a bit of cabin fever so I have been trying to bring summer indoors as much as I can. Inspired by the MorningStar Farms Burger Bar Truck that will be in Pensacola in a few weeks, I decided to bring summer inside with a Mexican Inspired Sweet & Spicy Veggie Burger Bar.
I have been feeling like I was in a “recipe rut” for a while, so I was excited to change things up and try something new. I have been doing “Meatless Mondays” for years but I have always just put together a large salad or vegetable casserole. Looking at the amazing photos and recipes at BurgerBarTruck.com I decided to try out the MorningStar Farms® Grillers Original Veggie Burgers this week instead and create my own “burger bar” right at home.
MorningStar Farms® Grillers Original Veggie Burgers are located right in the freezer section and come in packs of 4 or 8 depending on your needs. These burgers are made with Non-GMO Soy and have No Artificial Colors or Flavors. What surprised me though – these burgers have 27 grams of vegan protein!!! Who needs meat!?
Now Mike and I vehemently disagree on the topic of pineapple on pizza – but if you have never tried pineapple on a burger – you are really missing out. That is one thing he and I most definitely agree on. DOLE® Sliced Pineapple in 100% Pineapple Juice is already perfectly cut and ready for you to add to your burger. You can even toss them right on to the grill for even more flavor… ya know when it isn’t pouring down rain. But even straight out of the can these are plump and juicy and delicious and added just the right amount of sweetness to our spicy veggie burgers.
Next, I layered on my homemade guacamole – which is so simple to make I literally have it almost every day. I simply mash up one ripe avocado and add in about 1/2 teaspoon ground cumin, 1/2 teaspoon dried cilantro, 1/2 Tbsp of lime juice and sea salt to taste. You can even mix in a tablespoon of RO*TEL® Original to give it a little more kick or put it right on top of the guacamole like I did.
Then it was time to really turn up the flavor. Cholula® Original Hot Sauce tastes like what all hot sauce should taste like – with just the right amount of heat and bursting with flavor. I also added some fresh jalapenos (hey, why stop now, right?!) and finished it off with Gulden’s® Spicy Brown Mustard. Needless to say, this delicious veggie burger had a LOT of flavor.
No burger is complete without fries and a drink, so I grabbed Checkers Rally’s Famous Seasoned Fries along with Pabst Blue Ribbon® for the adults and Nestlé® Pure Life® Purified Water for the kids. I love that with minimal effort I was able to put together an impressive Burger Bar that just screamed SUMMERTIME… even as it poured down rain outside.
All in all our Sweet & Spicy Mexican Inspired Veggie Burger Bar was a success – and the kids loved it as much as us adults did. Midge even tried her first fresh jalapeno… which I doubt she will be doing again any time soon. It was a nice break out of our “recipe rut” and I know we will be having many more Meatless Mondays including MorningStar Farms® in the future.
