With St Patrick's Day coming up this weekend I have been looking for a way to join in the festivities... without breaking away from my keto lifestyle.

Yes, I will admit, one of the reasons I am such a big fan of Keto over other eating plans is that you can still indulge a bit from time to time on adult beverages, and while my typical "whiskey and diet" is a good choice, I wanted something a little different for the holiday.

This Ginger Lime Mojito is a twist on a traditional Keto mojito. An easy Low Carb Cocktail is made with one of my favorite mixers - Sparkling Ice - which has zero calories and zero carbs but tons of flavor! And let's be real... I will be drinking this far beyond St Patrick's Day.

Ginger Lime Mojito

INGREDIENTS

3oz Sparkling Ice Ginger Lime

1.5oz White Rum

10 mint leaves

Lime wedge, for garnish

Mint sprig, for garnish

DIRECTIONS

In an ice-filled Collins glass, add Sparkling Ice Ginger Lime, rum, and mint leaves, then stir. Garnish with a lime wedge and mint sprig and serve.

Guacamole Deviled Eggs

Guacamole Deviled Eggs

Try these delicious Guacamole Deviled Eggs from Eggland's Best at your next get together! Full of flavor, these are a total crowd pleaser! And bonus - they are even keto! 

Prep Time 10 minutes
Cook Time 10 minutes
Total Time 20 minutes

Ingredients

  • 9 Eggland's Best Eggs, large
  • 1 medium avocado, pitted and halved
  • 2 tablespoons fat-free sour cream
  • 1 ½ teaspoons lime juice
  • ⅓ cup seeded finely chopped Roma Tomato
  • ¼ cup scallions, chopped
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • 1 teaspoon jalapeno, chopped
  • cilantro to garnish

Instructions

  1. Fill a large pot with water, add all the eggs, and bring mixture to a boil over high heat.
  2. As soon as the water begins to boil, cover with a lid, remove the pot from the heat, and let eggs sit for 10 minutes.
  3. Drain water and transfer eggs to a bowl of cold water to cool.
  4. When the eggs are cool enough to handle, remove the shells.
  5. Slice each egg in half lengthwise. Remove the yolks, adding just 2 whole egg yolks into a medium bowl and discarding the remaining 7 egg yolks.
  6. Place the egg white halves onto a platter.
  7. Slice the avocado in half and remove the pit. Use a spoon to scoop the avocado’s flesh into a bowl.
  8. Use a fork to mash the egg yolks and the avocado together. Stir in the sour cream and lime juice.
  9. Remove the seeds from the tomatoes with a spoon and discard; finely chop the tomato, along with finely chopping the scallions.
  10. Add both to the mashed avocado, along with salt, pepper, and optional jalapeno. Stir together to combine.
  11. Spoon the guacamole into each egg white half, dividing the mixture between all 18. Garnish with a sprinkle of dried or fresh chopped cilantro, if desired. Serve.

St Patrick's Day Breakfast - Shamrock Eggs

This St Patrick's Day Breakfast is perfect for kids young and old who want to start their day with a touch of green and gold!

I am a firm believer that we should celebrate every single holiday - no matter what. We never know how many of them we are going to get, so celebrating incessantly can never be a bad thing. After all, you can never have too much happiness, right?

My family has come to know this about me, so no one will be surprised when St Patrick's Day Breakfast is over the top. These adorable and delicious Shamrock Fried Eggs are sure to be a hit for even the pickiest of eaters.

I have to admit - I used to not like bell peppers at all. To be fair, I never really gave them a chance. My children, on the other hand, would eat them like an apple if I allowed it.

This breakfast is super easy and only a few ingredients - which I always have on hand anyway - makes it perfect for even fast-paced school mornings!

This is also a keto-friendly recipe, but you can make it a Whole30 Compliant Breakfast by using ghee or olive oil in place of the butter!

How cool is that?! You can also experiment with other seasonings and ingredients to added to change up the flavor.

Putting together these Shamrock Fried Eggs is super easy - simply slice your bell pepper horizontally and place in a hot frying pan. I use these tiny little cast iron skillets.

Flip once, then gently crack your egg in the center, add seasonings, cover, and let cook until the egg is cooked to your desired doneness. Voila!

You can then top your little "shamrock" with things like salsa, green onion, and/or cheese!  So simple and delicious - the sky is the limit on what you can do!

Shamrock Fried Eggs

Shamrock Fried Eggs

Shamrock Fried Eggs are the perfect St Patrick's Day breakfast for kids of all ages.

Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes

Ingredients

  • 1 large Green Bell Pepper
  • 4 Eggs
  • 1 tablespoon butter

Instructions

  1. Slice the bell peppers into rings, about 2 cm thick. I got 4 rings.
  2. Melt butter in a frying pan, preferably cast iron, over medium-high heat.
  3. Place the bell pepper rings in the pan and turn once, after a minute.
  4. Crack an egg inside each pepper ring.
  5. Season with salt and pepper.
  6. Cover with a lid and cook until the white is set and the yolk reaches your desired doneness. About 3 to 5 minutes, depending.
  7. Remove from the pan and serve hot.

Notes

Instead of green bell pepper use colorful bell peppers for a spring/Easter themed breakfast.

St Patrick's Day: Simple Shamrock Cupcakes

These adorable Shamrock Cupcakes are the perfect St Patrick's Day dessert! Learn how to make shamrock shaped cupcakes in a normal muffin tin!

This weekend Midge wasn't feeling her best, so we chose to stay in and do some baking. Even though I do not do much eating of the sweets since my whole30, I do still love baking and decorating cakes, cookies, cake pops, and of course cupcakes.

Since we made our St Patrick's Day Deviled Eggs I was in a "green" kind of mood, so we decided to make some shamrock cupcakes.

I used my favorite Duncan Hines Blue Velvet cake mix and icing, and in no time we were devouring these little cuties.

Items needed:

  • Duncan Hines Blue Velvet Cake Mix
  • White icing
  • Food Coloring - all colors
  • Cupcake liners
  • Muffin tin
  • glass marbles
  • Candy "eyes"

Mix up the Duncan Hines Blue Velvet cake mix according to the instructions on the box. Add in yellow food coloring until batter is green.

Place cupcake liners into muffin tin, and then place three marbles in each one - between the tin and the paper. Be sure to get these as even as possible - you want your shamrock cupcake "leaves" to be all the same size.

Put cake batter in to a gallon ziplock bag and snip the corner off to make it easy to guide the batter into the three sections of the cupcake liner.

You only want to fill them about half full. The batter will rise some and you do not want it to come too far up over the liner as that will distort the shape of the shamrock cupcakes.

If it does though, you can easily trim it - it will never be seen once you add the icing 😉

Bake until completely cooked through - and let cool completely before removing from tin. The little marbles will be very very hot - just let them cool down with the cupcakes.

It is important that the cupcakes are completely cooled before going on, or the cake will come off in the icing.

Mix green food coloring into your white icing until it is the desired green. Put into ziplock bag or piping bag and pipe on to cupcake in a circular motion. Add candy eyes to one "leaf."

Add a few drops of red and blue food coloring to your green icing to make a charcoal-like color and pipe on a quick smile. Voila!

Serve Shamrock Cupcakes same day or freeze to eat later.

Saint Patrick's Day Party Deviled Eggs

Saint Patrick's Day is just a few days away and whether you are throwing a party or just want to do something fun at home, these St. Patrick's Day Deviled Eggs are a fun treat! The girls and I had a ball this morning making - and then quickly eating - all of them.

These eggs are so super simple! Hard boil six large eggs. Tip: putting baking soda in the water when you boil will help the shells peel off easily. Once boiled put in ice water for three minutes and then peel under running water. Carefully cut each egg lengthwise can pop out the egg yolk into a separate bowl. Gently rinse the egg white to make sure there is no yolk left. The yolk will absorb too much color and look weird. You want your egg whites nice and clean. Set aside to let dry.

Fill a glass bowl or jar with water and add 10-12 drops of green food coloring. Mix with a spoon and then slowly drop your dry egg whites in to the glass one at a time. Be careful not to plop them in there - it does splash!

Let the egg whites sit in the food coloring about 8-10 minutes or until they reach the desired green-ness you like. While they are soaking, use a fork to mash up your egg yolks for the filling. You can add whatever you would like to the filling - I add pickle relish, whole30 mayo, and mustard. Beat together until smooth.

Line your countertop with foil or wax paper and then a layer of paper towels. Using a spoon, carefully remove your egg whites from the green water and set right side up to dry. Make sure they are not touching each other - this will distort the color. Allow them to completely dry before moving on to the next step.

To make filling your green eggs quick, simple, and mess free, put your egg yolk filling in to a piping bag or large ziplock and snip off the end with a pair of scissors. Twist the bag and squeeze out the desired amount into each egg white. You can be pretty generous here - the added volume of the pickles and seasonings will give you a little more filling to work with. Plus - you cant have too much. Yum.

St Patrick's Day Cocktail - Bare Mojito

Are you hosting a party or bar tending on St. Patrick's Day and need to know how to make a green cocktail? Although green beer is usually the first drink that comes to mind for many people, it is not the only alcoholic drink that you have to serve your guests on St. Patrick's. Ingredients:

cucumber slices
2 teaspoons agave
1 cup crushed ice
Club soda
1 tablespoon rum
Cucumber skin "shamrock" or mint leaves for garnish

Directions:
Place lime, mint, cucumber slices, and sugar in a tumbler or highball glass and muddle. Add ice to glass; pour Bare Mixer’s over ice. Top with club soda or flavored carbonated drink. Stir and serve immediately garnished with cucumber shamrock or mint leaves.

St Patrick's Day Chocolate Mint Liqueur Cake Pops

Yesterday while playing on StumbleUpon I ran across this awesome recipe for Mini Chocolate Cake Donuts that just totally flung a craving on me.  I have been wanting something chocolatey for a few days, so this seemed perfect.  I planned on making them in the Babycakes Cake Pop Maker of course - making donut "holes" but with the same recipe.  The only ingredient I was missing was the Cocoa, so I headed up to Winn Dixie and planned to make them for dessert.

Then, Mike came home with a box of crack Thin Mints.   My chocolate craving went from just chocolate to a chocolate-mint craving... but the only "mint" I had was Peppermint Schnapps in the liquor cabinet and I was not about to go to the store a second time for just one ingredient... SO - the result?   Quite possibly the BEST tasting Cake Pops I have ever made.

St Patrick's Day Chocolate Mint Liqueur Cake Pops

Ingredients:

  • 1 stick of butter
  • ¼ c cocoa powder
  • 2 c all purpose flour
  • 1 ½ brown sugar
  • 1 teaspoon baking soda
  • 1 c Peppermint Schnapps
  • 2 large eggs
  • ½ c milk

It is probably best to mix all dry ingredients in one bowl and all wet ingredients in the other and then mix together - but I didn't do that.  I just threw everything in together which made for about 20 minutes worth of stirring to try to beat the lumps out of the batter.   I didn't get them all - which turned out to be ok - but just saying.

Once your batter is mixed spoon one teaspoon into each cup in your Babycakes Cake Pop Maker and cook for four minutes.  I was highly impressed at how well these puffed up and made perfect little balls - much like how well Pillsbury Funfetti (my favorite cake pop batter) does.  Pop your little yummy bites out onto a cookie sheet and let cool.   You can choose then whether to stick them on sticks or just have "cake balls" - we actually did both.

This recipe yields SIXTY cake pops...

St Patrick's Day Chocolate Mint Liqueur Cake Pops Icing

Ingredients:

  • 3 c powdered sugar
  • ½ stick butter
  • ¼ c milk
  • ½ c Peppermint Schnapps

 

 

The icing takes some time and patience - and sometimes adjusting - to get just right.  The measurements above are very close to what we used, however, to get the desired consistency you can add as much powdered sugar as you want.   Obviously the less powdered sugar the thinner the icing is - and the more you taste the Schnapps.   Using a piping bag you can pipe stripes onto your St Patrick's Cake Cake Pops or use a spoon to drizzle it on.  Either way, they taste absolutely beyond fantastic.
