Banana Nut Pancakes
  • 1 large ripe banana
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 2 Tbsp walnuts, chopped
  • 1/2 tsp baking soda (optional)
  1. Preheat a greased griddle over medium heat.

  2. In a mixing bowl, mash the banana into a puree, or leave a little bit of chunkiness. 

  3. Crack in the eggs and beat together with the mashed banana.

  4. For added fluffiness, you could also add 1/2 teaspoon baking powder at this time.

  5. Stir in the walnuts and vanilla extract.

  6. Pour about a 1/4 cup onto hot griddle.

  7. Cook until edges are dry.

  8.  Turn, cook until the other side is browned to your liking.
