Turkey and Sun-Dried Tomato Pinwheel Wraps

Meat and cheese wrapped in a tortilla is hardly a new idea, but slice the same wrap into spirals or “pinwheels” and you have a fun party appetizer. These fun-sized pinwheels are great for school lunches or after school snacks on the go. Fill them with your child’s favorite meats, cheeses, and vegetables!

Ingredients:
2 tablespoons mayonnaise
4 slices turkey
4 slices provolone cheese
shredded iceberg lettuce as needed
8 sun-dried tomatoes
4 tortilla wraps
 
Instructions:
Lay out the tortilla wraps.
Spread a light layer of mayonnaise over half of each wrap.
Lay out the turkey on top of the mayonnaise, then place a slice of cheese on top of the turkey.
Lay a few sun-dried tomatoes on top of the cheese, then top with iceberg lettuce.
Roll the tortilla wraps around the fillings, and insert toothpicks into each to hold it in place. Make perpendicular cuts into the wrap, creating the pinwheels. Use caution when serving, or remove the toothpicks before serving.

    This looks delicious. I have never had sun dried tomatoes before but I should totally try it because maybe it would be a way to get my kids to eat tomatoes.

    I love sun dried tomatoes but never thought to put them in a pinwheel. They look so fresh.
